| Wow! This is really good! Beat 5 large eggs. Add 1 tsp baking powder 1 tbs vanilla Zest and juice of one lemon 1 cup sifted coconut flour 1 cup sugar equivalent, I use 1/4 tsp liquid Splenda Add: 2 oz cream cheese 2 oz butter melted together Mix, bake in a greased loaf pan at 350 degrees for 40 minutes I sliced this into 12 slices. The nutritional info I came up with per slice: Calories: 101 Fat: 8 Carbs: 7 Fiber: 6 Net Carbs: 1 Protein: 5 These are all rounded figures. This is moist and dense and extremely good. A very nice, high fiber, very low carb dessert. Right now I'm thawing some strawberries to top a slice for later today, perhaps with a bit of whipped cream or even sour cream. Can't wait. | I just got a refill on my coconut flour and can't wait to try this recipe. It sounds like something I can contribute to the rolling carbohydrate festivals that take place in the break room! I'll try it in one of my silicone bundt pans.

| I think I need to edit this recipe! I don't see the sweetener in it! Ack! It takes 1 cup equivalent, I use 1/4 tsp liquid Splenda. Don't try to make it without! |

| i got the sweetner added in the instructions downstairs, i have some lc fudge setting from a recipe barb posted in a very old thread i ran across. i'm enjoying the treats. |

| I modified the recipe, it was moister. I used half a stick of butter, 3 oz cream cheese, and added 1/4 cup sour cream. This made a very dense but moist loaf. Still working on making it perfect. Gotta not do this too often, 'cause I eat way too much of it. At least it has tons of fiber! |

| OK... Am I missing something here, or what? LOL! I recieved my order from Netrition...some arise 5 & 8K, carb-quik, a couple bottles of SFDV syrups and a bag of coconut flour. I was reading the label on the coconut flour...huh?...gulp!...that CAN"T be! Did a double check online, and alas it IS true... 2 Tablespoons = 16.6 carb minus 10.5g fiber = 6.1 NET carbs for 1/8 of a cup!!! That makes it 132.8g carb minus 84.0 fiber = 48.8g carb for 1 cup. Hmmmm....I thought it was like 6g net for a whole cup. Well, darn. Learned my lesson; I should've pulled the nutritionals down and read it BEFORE I ordered it. So, I ran the above Coconut Flour Pound Cake(as in the 1st post) through fitday and got: 151 cal 8.5g fat 12.08g carb 7.08g fiber 6.25g pro 5.0g net carb for 1/12th of the recipe. The coconut flour I got is Aloha Nu organic; only ingredient: organic coconut. So, again...am I missing something??? (Because I reeeeeeally want to make this cake!))) s

| I just looked it up, too, and this is NOT what used to be on the package. The info I took off the package and put into Fitday is 1/4 cup has 20 carbs and 18 gms fiber, so 2 net. This was off the Aloha Nu brand. And now the nutrition facts show exactly what you say. Wonder why the difference? Now you have me wondering if we can trust other nutritional labels. |

| Could be Aloha Nu changed the formulation? Still, not bad for a good dessert, IMO

| I try to avoid relying on the nutritional labels particularly for "unusual" items that I do not have a feel for the carb count because I have seen too many instances of inaccuracies. I usually rely on the label, only if I can't find other information. For coconut flour, which I assume is ground unsweetened dried coconut, I would use the USDA nutrient database for dried unsweetened coconut and figure that 100 grams of dried coconut would produce 100 grams of coconut flour and based on theor data, the carb count would be 23.65 total carbs with 16.3 grams of fiber for a net carb count of 7.35 per 100 grams. I would then weigh 1 cup of coconut flour and determine how many net carbs are in 1 cup, or any fraction thereof. That is the only way I would have any sense of confidence in what I was using.

| Makes sense, Henry. I just wonder why the data changed. The original date for 2 tbs was 10 gms carbs, 9 fiber, 1 net carb. That's why I was so excited about using it. Now it's 16.6 carbs, 10.5 fiber, so it's 6.1 net for 2 tbs! Yikes! I like your calculations a whole lot better, Henry. |

| Nita, I have no idea what they did. I suspect that they need to change the serving size. However, applying the USDA numbers and assuming that 2 Tbls weighs 28 grams, as indicated on the label, then the count I would use for 2 Tbls of coconut flour is 2.05 net carbs (7.35 / 3.57 = 2.05) (3.57 is the number of times 28 must be multiplied by to equal 100 grams.) That would make the flour component of the recipe about 16.40 net carbs for the 1 cup used as there are 16 Tbls in 1 cup.
