I do mine very simply. I do a couple of racks at a time, because when they are on sale, they are in packs of 2 racks. First, I cut the ribs into sections of 2 to 4 ribs each, depending on the size of the rack. then I put a thin coating of plain yellow mustard on both sides of the ribs and then pat both sides with Bar-b-q spice that I get from a spice company in town. I then cover the pan of ribs with plastic and refrigerate overnight. To cook them, I simply stack them in layers in a roasting pan and cover and bake in a slow oven (225 degrees) for 3-4 hours, until done. This process results in a lot of fat being rendered from the ribs. I then put the ribs, in batches on a hot grill turning after a few minutes to finish both sides. I serve them with l/c bbq sauce on the side.

Thank you both. I've been cruising the net pretty much non stop all week and have gathered some great ideas plus scored some LC cook books. It's SO much easier when you have a plan to follow the plan!!
