Lemon Bars

Default Lemon Bars

I threw these together this morning, and they turned out pretty good. Next time I'll use a larger lemon for more zest and a deeper flavor.

Soften 1 stick butter and 4 oz cream cheese

Mix together with 1/4 tsp liquid Splenda, or your choice of a/s to equal 1 cup of sweetener. Be sure to add in the carbs.

Add a tsp of vanilla, and the zest and juice of 1 lemon. (My last lemon was small, this could use more zest.)

Stir in 2 cups of blanched almond meal.

Put in a 9" square buttered baking pan.

Bake at 350 degrees F until brown on top, about 1/2 hour, but check at 20 minutes, depending on your oven.

Cut into 16 squares.

Calories: Total 417 Per square 26
Fat: Total 40 Per square 2.5
Carbs: Total 55 Per square 3.6
Fiber: Total 24 Per square 1.5
Net Carbs: Total 31 Per square Just over 2
Protein: Total 105 Per square 6.5

These are small bars, but when you need a bit of a sweet treat, they hit the spot. This recipe might also work as a crust for a cheesecake. I'll have to try it and let you know.
