Rob,
Staten Island girl here. We did put egg in our ricotta mixture for ziti-usually anyway. The nutmeg was put in the manicotta mixture which was basically the same as the ziti one.
Crazy Italians, huh?

The Cobb salad sounds wonderful-gonna have to make on myself-with blue cheese dressing.

I rashly rushed into baking a small ham yesterday, forgetting that I am the only one who will be eating at home for the next few days. Frugality dictates that I do something with that, so I'll probably make kind of a mac and cheese using cauliflower (of course) and toss in a bunch of ham. First I have to deal with scraping up some appetite for my breakfast. I love all the great low carb foods I can make that are so tasty and satisfying, but unfortunately my appetite is pretty small now and I have to push myself to eat much of anything.

I had baked (fresh Atlantic) haddock with cole slaw and a salad last night.

Sunday is usually cheat day but I am going to be cool today because I lost another pound and I am really motivated so I should take advantage of it.

Today I had a Tuna salad for lunch and dinner will be teriyaki chicken (sweeted with a teeny, tiny bit of molasses) stir fried pea pods & cauliflower and a slice of Joseph's Omega3/Flax Pita bread. For dessert I am having Edy's No Sugar Added Vanilla Bean ice cream...2 maybe 3 servings!

Staresm... Here are a couple of ideas for that left over ham. I really love Morton's Nature Salts Seasoning (no MSG) so you will find it in most recipes I post. It makes such a big difference in the flavor of whatever you may be cooking. TRY IT!

BTW I really like the cauliflower, ham and cheese idea - faux mac & cheese.

Ideas
1. Ham Saute - Saute' (in olive oil) some zuchinni and summer squash until tender. Spice with Morton's Salts Seasoning (onion, garlic, celery, etc). Add the ham, cook until the ham is heated through.
2. Cabbage and Ham Soup - chicken stock and Morton's Seasoning with cabbage and ham chunks
3. Ham and cheese quiche - Maybe throw some spinach and mushrooms in there...yum
4. Deviled Cucs - Grind the ham really fine, mix with mayo &/or mustard and Morton's Seasoning. Scoop the seeds from a cucumber and fill it with the ham mixture. Top with some fresh grated parm cheese (or whatever kind of grated cheese you like.)
5. Maine Fish Chowder

1/4 pound ham (chopped)
4 cups cauliflower, chopped small
3 onions, chopped
1/2 teaspoon salt
4 cups hot water
3 pounds haddock
2 cups water, boiling
1 1/2 teaspoons salt
2 cups milk
1 teaspoon butter
1/4 teaspoon ground black pepper
  1. In a saucepan over medium heat, saute in butter the ham, chopped cauliflower, sliced onions, and teaspoon salt. Cover with hot water and cook over medium heat, covered, for 15 minutes, or until the cauliflower is just tender. Do not overcook.
  2. Meanwhile, cut haddock into large chunks and place in another saucepan. Add boiling water and salt. Cook slowly, covered, until the fish is fork tender, about 15 minutes. Remove from the heat, strain, reserving the liquid. Remove any bones from the fish.
  3. Add the fish and the strained liquid to the cauliflower/onion mixture. Pour in milk and heat through, about 5 minutes. Mix in butter and pepper.
6. Cold ham and chick peas - served over cole slaw.

7. Dinner Party - Invite some friends over to eat with you and that way you won't waste the ham and you will have some fun too.

Dinner was roast pork, twice baked fauxtatoes, asparagus, and sliced strawberries w/cream for dessert.

LOL Katalina. Yet all Italian dishes are wonderful!

My niece's husband smoked a pork shoulder all day long! excellent! with 2 kinds of cole slaw, the one with sugar and one without (for me).

Mmmmm Rob...looks good. Last night I did a couple of turkey breasts in the slowcooker and had broccoli and salad with it. Dh had potato salad and corn on the cob.

Tonight....leftovers.

I want dh to grill some pork chops (after all, I bought him a brand new grill, he ought to be using it!), but time may be a problem - he has dance class and his amateur radio club meeting tonight. So, perhaps we'll have bacon & eggs tonight, and save the pork chops for another night. I'll make a OMM for us to split, and brown some kind of veggie for a side. Simple is always best!

Tonight's dinner will be a lettuce salad and Dreamfield's spaghetti w/meat sauce. I fixed (browned ground beef with Italian seasoning, garlic, and diced onion) the meat yesterday. When I get home tonight, while the spaghetti cooks, I will heat up some l/c marinara sauce seasoned with a little garlic powder, Italian seasoning, and a touch of liquid splenda, and then add the cooked ground beef. I will make enough for 3 meals for DW and I as this will be our dinner under my week's meal plan for Monday, Wednesday, and Friday. I will then freeze the leftover Italian seasoned ground beef to use in breakfast omelets. I find that cooking in bulk, certainly saves time.

kristy-sounds like a great way to add a couple of things for the "carb eaters" in the bunch without throwing yourself offtrack.

tonight, looks like i'm back on "easy" with my stew meat in a bed of stir-fry veggies.
