Last night I opted for the easy route, heated up the faux split pea soup, added a bit of leftover diced roast beef, and a cheese crisp on top. Filling, and all I had to do was nuke it.

Tonight will be the pork (I cooked it last night, it's portioned out for 3 meals now), and red cabbage/jicama slaw.

Tonight's dinner will be from the appetizers I am making for our book club meeting. Deviled eggs, nacho ordinary roll-ups, warm curried chicken spread w/dried cranberries and slivered almonds served with my l/c killer crackers, vegetable crudite w/dip, and Shelley's stuffed strawberries for dessert.

Susie-The spinach stuffed chicken breast was fantastic. I creamed the spinach with heavy cream and nutmeg and stuffed that inside the breast with the slice of swiss cheese and a piece of bacon I had left over from breakfast. Very filling and satisfying.

Tonight I'm having chicken tenders with a sauce I'll make with peanut butter, splenda, garlic,rice wine vinegar, a tiny splash of Tamari, and cilantro. I'll also have a green salad with a few grape tomatoes thrown in.

I would love to have your recipe for that little number, sounds delish.

Not sure what I'm having, all the "planned overs" are gone. It's back to scratch, that's ok I don't mind cooking...when I WANT to cook.

Susie-I believe that this might be an old Weight Watcher's recipe-though I'm not sure as I've used it for many years.

3TB creamy peanut butter
1 package splenda or othe sweetener that =@ 2tsp sugar
2 garlic cloves minced
1-2 TB Tamari or soy sauce
1TB water
@2tsp rice wine vinegar
As much chopped cilantro as you want-at least 2-3 TB

Mix PB,splenda, and garlic together until smooth. Add the Tamari, water, vinegar,and cilantro and stir until all is combined.

I spoon just a little bit over the cooked chicken-maybe a TB or so-I tend to get 4-6 servings from it-so I put it down as @ 3Carbs. Hope I ain't kidding myself here!

Sounds nice. I bought some leg qtrs. and I'm thinking the thighs will do nicely for this. DH will love it. His sister lived in Thailand for 26 years and her cooking is devine. This is a version of Chicken Satay, simple.

Roasted a chicken last night and made a really tasty cabbage side dish. I sauteed finely chopped onion in olive oil and butter until just strting to color. added chopped mushrooms and cooked another 2 minutes or so. Added half a head of cabbage sliced into strips. stirred ocacsionally for about 20 minutes. added a dash or 2 of soy sauce with ginger flavoring and 3 tbs gorgonzola cheese and cooked for 5 more minutes. Probably made 4 servings. I ate all 4.

Uhm, I am drooling!
Tonight for us is chicken stir fry. Our market sells the veggies pre-cut. I wish I could get the chicken the same, I hate touching raw chicken.
I hope the boys don't want too much of it! It would make some delish lunches for me this week! LOL!

Dinner tonight will be an experiment with leftovers. We hosted our bookclub Friday and one of the dishes I made was a warm curried chicken with dried cranberries and slivered almonds salad/spread/dip thingy that we put on crackers to eat. It was quite tasty, but I ended up making a double batch by the time I cut-up the chicken. As a result, I have a lot of a very tasty leftover that I want to incorporate into a main dish. So, for dinner I will combine the curried chicken with some leftover cauli-rice for a main dish casserole. We will have a side veggie, to be determined later with it and a couple of Shelley's stuffed strawberries for dessert.

I understand the not wanting to touch chicken, but you can go to your local drug store and buy a box of rubber gloves, keep under the sink and whenever youare working with chicken or any other food, put them on, then throw them away when you are done....simple, and you don't have worry about touching the chicken again...
