Well, girls, at least you don't have to butcher the chickens yourself! I remember my Momma doing that. If she accidentally let go of the chicken after she lopped off the head, it would continue running for a bit. Scared the livin' daylights out of us! After she pulled all the feathers, she would singe off the pinfeathers with a lit piece of newspaper. That smell is absolutely awful. After seeing the process, knowing what it's all about, handling a raw chicken is nothing in comparison. But, in retrospect, the fresh chickens, raised lovingly by Momma, cooked in her own special way, were so much better than anything we can buy in the grocery store today.

Tonight I'm having tuna salad. Canned tuna with shallots, celery, red bell pepper, fresh thyme, Dijon mustard, and mayo. I washed 2 large Romaine lettuce leaves to hold the tuna. A OMM with sliced strawberries and a little cream cheese will end the meal.

Dinner will be a red leaf lettuce salad, a piece of Deep Dish Pizza Supreme, and a couple of Shelley's stuffed strawberries for dessert.

Last night was a spinach salad with sliced mushrooms, tomato slices and celery. with cubed chicken breast and gorgonzola cheese.

Tonight I'm having the Cheesy Chile Pork Chop recipe I found in the recipe section. I'll have a jicama salad with lime juice also. Got a bag of frozen blueberries and I'll probably have a few for dessert.
