I still have tons of pork & chuck roast left over from Saturday, and lots and lots of homemade coleslaw, and some bbq black soybeans, so it'll probably be that, maybe mix some of the meat with 0 carb bbq sauce & put in a lc tortilla for dh. I'm going to let the microwave oven do all my cooking tonight so as not to heat up the house. Oh, and I'm going to make a pitcher of iced tea.

Last night cooked up some chicken tenders in olive oil flavored with hot pepper flakes and garlic-added some frozen broccoli into the mix and I was set to go.
Will probably have an omelette tonight as I have some work to complete-that sound you hear is my nose hitting against the grindstone.

OOPs-hit the bottom before I was finished-wanted to tell Rob that the pasta dish he cooked the other night is basically how we NY Italians make baked ziti. Good stuff.

Hey Goddess,

I have been dreamining about pasta... I read Maggie's review on it and I am definitely going to check this soybean pasta out. Imagine having pasta with alfredo sauce....I can barely speak...
Of course I will add some veggies to it

i made it with chicken and alfredo sauce, and really liked it. i have some of the green i haven't tried yet that i thought i might do with pesto, as i think maggie suggested if i remember correctly...

and ya gotta love those veggies!

Tonight was dinner date with DH to our fav Mexican food cafe'.
I had my usual: beef fajita salad, no beans, no shell. Just good ole fajita meat, cheese, lettuce, sour cream and salsa!

Tonight I have leftover beef roast and leftover carrotts and turnip (mashed together). Mix that with a salad and dinner is ready. Gotta love leftovers.

Shelley: I make something similar that I call a Hamburger Bowl. I put cooked hamburger meat in the bottom of the bowl and then start layering things...tomatoes, lettuce, black olives etc and end with cheese. Then nuke the whole thing until the cheese is melted. Love it...and very little mess or dishes to do.

Last night I took some leftover faux split pea soup I'd made Saturday, but I used snap peas instead of green beans, (believe it or not, it tastes more like pea soup made with green beans!), and this soup was quite thick because I'd used an entire head of cauliflower in it. Had a bit of leftover smoked sausage sliced, put that in, some pork roast, diced, some browned bacon, and let it all heat through, then added some cooked frozen shrimp and some red pepper flakes, heated until the shrimp was hot. Gumbo! This was a wonderful thick soup. Actually, it was my daughter-in-law's idea to turn it into a gumbo-like soup. Thanks, Nikki!

This evening I'm having oven barbecued pork spare ribs. Just slow roast the ribs til they are nearly done. Oven or slow cooker works just as well. Make a sauce of 1/2 c water, 1/2 c low carb ketchup, 1/2 c white vinegar, 1 tsp yellow mustard, 1 tsp worchestershire sauce, stevia or whatever sweetener to equal 2 tsp sugar. Pour over pork and cook for another 30 min or so. USDA nutrient database shows 8 grams carb for the whole sauce (4 servings). I'll have that with some mashed fauxtatoes and green beans. This dish is serious comfort food in our house.

Tonight I'm having filet mignon wrapped in bacon with a spinach salad with blue cheese dressing (homemade) and probably a small class of sangiovese wine. Yum.

This thread makes me hungry at 8:30am! I don't know what is for dinner tonight. Last night was grilled steaks (that were AWESOME) green beans and salad. SF jello w/ whipped cream for dessert.
I'm suppose to go to a pampered chef party tonight, but I'm not feeling so good, might go home and if I do that, the party is out -because it is on post and I don't want anyone thinking I was faking sick if they see me- downside of military life!

Tonight DS and I are having small ribeyes with a side salad of some sort and I need to find something to make for a dessert. It's DS's 31st birthday and I want it to be special!

DH is working so he'll miss the yummy dinner!

Yes Katalina it is very close to the way i make baked ziti. Only difference was the use of egg and nutmeg in the ricotta cheese. My mom learned to cook Italian food from a NY Italian friend. I grew up in NY (queens).

Last night i made the most delicious cobb salad. In case you aren't familiar with cobb salad it has avocado, grilled chicken breast, crispy bacon, hard boiled egg, on a bed of lettuce and tomato. i used ranch dressing and instead of the h.b. egg I added boiled shrimp. didn't have blue cheese either which is usually found in this salad. but the shrimp more than made up for that omission.
