Default What's For Dinner?

I usually post what I'm planning for supper, or what we had the night before, in my journal, and now it's been dubbed the "What's For Dinner" journal, because some have somehow been inspired by my menus.

So, I thought we could take this a bit further and have a place for everyone to post their supper plans, or what they had the night before, so that we ALL can be an inspiration to others. After all, that's what we're here for!

So, last night was simple, I got my bag of frozen diced chicken breast meat out, and a bag of mixed veggies, and just steamed them together, to eat with butter. Simple, simple, simple. We were in a hurry, so didn't bother to cheese this up, but I've been known to grate some parmesan on top, or to make a quick cheese sauce for it.

My cheese sauce is basically a bit of mayo, cream, seasonings, and shredded cheese. The mayo makes it thick & creamy w/o having to use any kind of thickener. A little goes a long way, too. You don't need to drown your food in cheese sauce, just a bit to add some interest. Remember, too much cheese can be a stall-maker in some of us.

I think tonight we might bring home a rotisserie chicken after we do a bit of shopping. No time to cook tonight!

I copied the recipe for Spicy Ranch Chicken and I'm going to try that tonight. The only thing is I don't have cider vinegar in the house and as I'm working on deadline today I won't be able to get out and pick some up. Do you think I could substitute a tablespoom of rice vinegar for that? Anyway-will be adding some frozen broccoli with olive oil, garlic, and red pepper flakes.

Last night did a simple pork loin chop in a mixture of olive oil and butter, salt and pepper, along with a salad. Simple but delish.

I'd think that the rice vinegar would work as well. In a pinch, I'd use red wine vinegar, as well.

That's right, Nita has the "What's for dinner" journal!!

Well, last night for dinner, I wanted something quick and easy. So I grabbed some pre-cut stew meat, cooked it up in a pan, and added some butter and a bag of frozen stir-fry veggies. Super easy supper!

tonight will probably be:
Chicken fried steak since I have cubed and tenderized round steak defrosting.
Will have mashed fauxtatoes, green beans with ham, and a side salad.
Depending on my carb count, I may have a strawberry/peach smoothie as a treat(before 7PM!).

all of the above subject to change....it's a crazy day!

Good idea for this thread, Nita. You don't really want to know what I had for dinner last night. We got home from town late so it was a bag of pork rinds....I know, I know...not a good idea.

Soooo...the above will prolly be tomorrow night; tonight was:
grilled pork loin chop(left over from last night)

Great idea here!

Had dinner with my sis tonight. She made fresh hamburger steaks, quick seared in an iron skillet with sautéed onions on the side. A wonderful spring salad made of organic baby greens, grape tomatoes and flat Italian parsley, dressed with EVOO, vinegar and sea salt. Gosh, that was the best meal. Always nice when you can eat someone else's cooking.

I made a sort of inside out lasagana. Was too lazy to layer it so all i did was cook up some dreamfields penne pasta and added ricotta cheese (mixed with an egg and parmesan cheese)mozzarella and parmesan. stirred it up in a pyrex dish and baked at 375 for 25 minutes. i only made 2 servings. was pretty good for being so easy. and i have a whole lot of the ricotta mixture and mozzarella and parmesan left over so i can make this again 3 more times without buying anything.

I've been wanting to make some chili for the longest time and I keep forgetting! I am going to plan that for this coming week.

Tonight, I'm making pan-seared cod with an orange beurre blanc and fresh mint. It's fab!

For tonight, I have a beef roast cooking in my slow cooker. I'll add some mashed turnips and a salad and voila....dinner. What are you having?

last night, it was spaghetti. (i'm one of the lucky ones with dreamfields, so that's what i had, but the other night, i also had that soybean pasta, and it was good, too!)

more frozen veggies to go with. easy, easy, that's my motto!
