Default cheese sauce

from Dana Carpender's 500 low-carb recipe book

this is actually from her turnip au gratin which I made and am waiting to see how it turns out . . . . BUT, at this point, I'm not sure I really care - cause this sauce is HEAVEN!!!!

1 cup heavy cream
1 cup half and half
3 cups shredded cheese (I used a mix of Swiss, American and good cheddar)

bring the cream and half & half to a simmer (do this SLOWLY, don't flame it like a Super Hero!)
add in 2 tablespoons of cheese - mix and wait for it to completely melt, add in 2 more tablespoons of cheese, mix, melt and add more cheese and be patient, this recipe takes time! - mix, melt, mix, add, mix, melt, stir - and taste!

When all the cheese is mixed/melted in (yes, you can SO add more) finish it off with a few grates of FRESH nutmeg (ok, pre- grated from the market's ok, but you WILL taste the difference if you grate it fresh on your microplane) you are done!

This is super in a cup and sipped slowly while watching a good Bogart-Bacall movie (did I just type that out loud?)

Put this over veggies, LC pasta, your keyboard . . . look, it's that good!

Per fitday, this comes out as 21 net carbs for 3 cups of sauce. Ok, it's good enough you'll be tempted to tank down the whole 3 cups, but actually 1/4 cup OR LESS is what you'll actually eat. So that is 1.75 carbs for 1/4 a cup!!!!!!

Extra sauce can be stored for future use (how long, I'm not sure, we'll find out together?) - BUT, taking a tip from Paula Deen what I did was spray a plastic container with EVOO spray and put the leftover sauce in there - as I re-heat, I may have to add a bit more cream or cheese - but I cannot recommend this more highly.

Well, shock me silly and slap me purple - turnips au gratin ROCK.

If it's ok with Goddess, I'm willing to post this recipe.

(I'm not sure if there's a copy right issue as this book is a collection of recipes gleened from the internet)

Let me know - this really IS good!

I have Dana Carpenter's book. It is, by far, my favorite low carb cookbook! So many great recipes that have become a staple here. Have you tried any of the cheesecake recipes?

ok, i looked it up, and i think we'd be fine reposting the recipe with proper credit given to dana carpenter, naturally.

i appreciate your checking, because this can become a tricky area and we definitely don't want to violate other's copyrights.

which one do you have?

i personally haven't tried one of her cheesecakes, because completely love george stella's new york ricotta cheesecakes. i should probably branch out and try new ones, though.
