Default Macaroons

Easiest Ever Macaroons

2 egg whites
1 1/2 cup coarse shredded dried unsweetened coconut
sweetener of choice to equal 1/2 cup sugar
1/2 tsp nutmeg
small dribble vanilla flavouring

Preheat oven to 350 degrees
Whisk together, til a little foamy, the egg whites, nutmeg and vanilla. Add and whisk in sweetener. Mix in coconut til it's all coated. Mound by tablespoonful on baking sheet lined with parchment. I like to top each cookie with a macadamia nut, that's not in the nutrient count either. Bake at 350 for 10-15 minutes til golden. Makes 18 cookies.

*Counts do not include sweetener. Some people use splenda so you have to add about 12 grams of carb to the recipe or .75 grams to each cookie. Some people use carb free sweeteners. Adjust to whatever you prefer to use.
