| I made this recipe up, so there are no measurments. Here's hoping you like it. Chicken lettuce wraps green leafy lettuce, washed and separated for wrapping boneless skinless chicken breast, cut into bite sized cubes veg oil soy sauce, to taste white vinegar hot pepper sauce (like Tabasco) roasted peanuts, chopped red pepper flakes I cooked approx 1lb of chicken. Heat oil in skillet, adding red pepper flakes just before chicken. Cook chicken in batches with peanuts on high, stir fry style. Once all chicken is cooked, add all back to skillet and splash soy sauce, vinegar and hot pepper sauce to taste. Serve in lettuce with hoison sauce. Recipe below. I did some searching on line and found a sugar free molasses syrup. Not sure if it would taste as good, but the site is nature'sflavorsdotcom Couldn't get it to cut and paste, so I hope it's ok to post. Happy wrapping. Hoison Sauce Ingredients: 4 tablespoons soy sauce 2 tablespoons peanut butter or black bean paste (I used fifty50 pb) 1 tablespoon honey or molasses or brown sugar ( I used molasses, I think it's 6 carbs) 2 teaspoons white vinegar 1/8 teaspoon garlic powder 2 teaspoons sesame oil 20 drops chinese hot sauce, habenero or jalepeno 1/8 teaspoon black pepper. Whisk together. At first, it does not appear that this will blend, but it does. |
