Shelley, I plan on making these for our book club that we host tomorrow night. I decided to do a trial run at the office today as we are celebrating several birthdays. I was not sure how well they would keep, so I decided to put them together at the office. I made the filling last night, but because I was concerned that the cream cheese would be too hard to pipe into the berries, I added some sour cream to the mixture. It worked great and I was able the pipe the filling into the strawberries with no difficulty. The berries vanished quickly as people came back for more, taking 2-3 berries at a time. I am sure our book club will love them. Thanks for the recipe.

Good idea on adding some sour cream; what's not to love with a combo like that?!!

Henry! Thanks for reminding me of book club snacks. My book club is meeting in a couple of weeks, and Shelley's strawberries will be perfect Of course, I'll have to do a trial run here at home first, won't I

Idea for an already great recipe.

If you haven't made Shell's strawberries, you should, these things are outta this world. As a side note, I wouldn't advise filling the berries the night before, the juice will fade into the cheese. I filled mine about 3 hours before serving time and the berry juice was already starting to fade onto the cream cheese and my berries weren't juicy. My nephew suggested that a tint of food coloring to make the filling pink might solve the problem if you needed to make them up several hours ahead.

Susie, I made my filling pink anyway by adding some of my strawberries mascerated in my strawberry syrup that I use for my morning cereal. I did this because my vanilla created a light tan color to the filling. BTW, the pink color creates a nice contrast with the red strawberry and the white whipped cream. Also, by adding some sour cream to the filling, it was easily piped into the berries. I was able to create a pastry bag using a plastic food storage bag and snipping off a corner of the bag enables me to fill each berry easily. In addition, I keep the leftover filling in the piping bag in a second plastic bag so I can easily create additional stuffed berries while retaining portion control. For example, tonight I simply filled 4 berries with the filling before dinner and then topped with whipped cream when it was time for DW and I to have dessert. I will do the same tomorrow night as well. This is an easiy recipe that makes great use of a seasonal low carb fruit.

Henry, I did the same thing with a plastic ziploc to pipe my filling into the strawberries. Last weekend I posted in my journal after I made them and included a couple of pictures.

Shell, can you tell all of us LOVE your mom's strawberry recipe.

I'm chiming in, too. I made Shelley's Strawberries last night, but they never made it from the counter. DH was eating them as fast as I could make them Had to slap his hand to get a few for myself! So this will be a winner for book club.... I think I can make the berries and cream cheese mixture just before I leave and add the whipped cream when I get to the meeting, eh?

Henry, I like the idea of the pink cream cheese/sour cream mixture, too. Most of the book club gals are rather sophisticated foodies, and I am SO not! I usually bring wine but now I'm wondering if there is a strawberry liqueur. Must be!

That's why my mom usually always minced the strawberry *bottoms* and added to the cream cheese mixture. Her berries always had a delightfully pink *dotted* filling! She also always *hand stuffed* the berries with my baby spoon that she kept. Gosh...isn't it amazing what you remember from your childhood regarding the good ole homemade stuff by mom or grandma, and how they made it, even? LOL!
They don't call some things *comfort food* for nothing, eh?
Dang....I do believe this is one of my comfort foods.
