| So......I stuffed them! My mom used to do this when I was growing up. She called them *special dessert strawberries* ![]() Easy and quick. I DO save the bottoms and mince them to put in the cream cheese for a pretty pink color, but if you wanted *all white*, then just eat the bottoms as you remove them!! Core the berries as well after washing and patting dry. I use about 2 Tbsp cream cheese for 6 large berries; add a few drops of liquid splenda, and a drop or 2 of vanilla. Stuff each berry and top with a dob of whipped cream. ![]() ...and, yes...I ate them all for lunch!!!

| That looks like a nice, simple, seasonal dessert Shelly. What do you use to core the strawberries to create the cavity?

| Shelley your strawberries look so good!!!! I am just now starting to find good strawberries at the grocery store again--it must be strawberry season somewhere. I make a similar dessert but use mascarpone cheese instead (mixed with splenda and vanilla). It comes out tasting like cheesecake. |

| Shelley-I had to clean my screen after seeing your strawberry photos-tongues do streak up the glass! The strawberries look wonderful and now that we're getting a few California strawberries in will have to try stuffing a few. Thanks. |

| Henry...I just pinch the leafy caps off, then use a small paring knife to core them...easy-peasy! Liz...I've had the marscapone recipe also...heck...they both are yum-O!! My mom also would whip a dab of marshmellow cream in the cream cheese sometimes. Well...that was definitely back in the days of *pre LC* ha! Katalina...LOL...I don't want your screen to get streaky again...but....they tasted 10 times better than they looked!! LOl!Thank goodness we are starting to get some really good berries here in OOOOklahoma!!! It's about time!!! s

| Thanks SO much, Shelley! Those look (and mentally taste) fabulous! I look forward to serving these at some of my summer BBQ's! We usually get a beautiful local crop around July. I can hardly wait!

| Well THIS is what I get for not checking in yesterday. I HAD strawberries but ate them in a smoothie instead of enjoying them like this. Thanks for sharing, I'll have to remember this! |

| Oh, they look luscious! We usually slice ours, then whip cream with some cream cheese, sweetened. Makes a much better dessert than just plain whipped cream, any day. Yours look so tempting! Drool.

| Yummy!! I just got strawberries so tomorow will get the cream cheese and will try it. I wonder if those strawberries mashed in the cream cheese would be nice as a filling inside the omm. (cutting in half the muffin and filling the middle with the strawberry/cream cheese mix) Carmen |

| Shell, I made your strawberries today for Miss M's 16th and they were a hit!!! I made 1.5 qts. and they disappeared within minutes. We served them with the cake & ice cream because someone was there who is diabetic and she had them for her treat. I used your mom's recipe and added a touch of almond extract with the vanilla and a smidgen of stevia with the Splenda. Those things are awesome! I posted a picture in my journal. Thanks so much for sharing your mom's special strawberry recipe with us. |

| SistaSue, !!! Glad the stawberries were a hit. And a drop of almond extract does sound divine!!! I did put a tad of steviaPlus in mine the other day. I almost always use the splenda-SteviaPlus combo...it just works so well!As hard as it was, I passed up the berries today at the market. They are still calling to me though...LOL! s
