Last night, we had guests, so we had a snack/dinner. Veggies and dip, cheese (and crackers for the guests), deviled eggs, little smokies, and the hit of the night: Shelley's mom's stuffed strawberries.

Had a nice visit, too, and our friends brought over their Wii so we could check it out. A much welcome relaxed evening.

Tonight is our last dinner with our son and his family for this trip. I will have a glass (or 2) of "Rose the Riviter" (a cutsey name for a blush wine that my ddil found), Poached salmon, Dijonaise & cheddar crusted cauliflower, zucchini, and black berries w/cream.

Home made chicken soup tonight-it tastes and smells wonderful.No carrots though-I have a tough time with carrots-they always make me feel sleepy. Too weird.

Tonight is just a leftover burger patty and some veggies.

Goddess, DS asks for that caulicrust pizza at least once a week! I make it because he isn't much for eating veggies and he'll eat this! He hates cauliflower especially and if this will get him to eat some, I'll do it!

Linda, if my DD asked for ANY kind of veggie, this house would be awash in it! She's such a junk food lover it's not even funny. I hear ya!

Tonight I made the corned beef and cabbage in the crockpot. Used onions, carrots, turnips for my "potatoes" and it came out tasting pretty good. DH was pleased. DD didn't get near the veggies, but at some of the meat anyway. Tomorrow, I'll probably feed him the leftovers and leave DD to fend for herself.

Last night was pizza. Make the crust out of cheese. V. good. Hubby always thinks I am "cheating" when I make it! LOL!

Tonight we are going Greek. This is a new recipe for me so I'll let you know how it goes. I am making Gyro hamburgers topped with Tzaziki served over a Greek salad. Yummo! It is a modified Rachel Ray recipe. I love my GYROs but had a hard time leaving the pitas behind, so I think this will do nicely!

Last night I made a huge bowl of coleslaw, with cabbage and lots of jicama, and just a bit of carrot. Ate way too much of it, and there is plenty in the fridge for lunches & suppers for a week!

Tonight I am going to try some beef cheek meat. My son-in-law talked me into buying it, I found a recipe online to try. It's supposed to be an extremely rich and tender meat. The recipe calls for wrapping it in a double layer of foil and baking it for at least 6 hours at 300 degrees F. The person who posted the recipe seasons with salt only. So, I'm going to try it and let y'all know what I think of it. I'll have some ham on standby, just in case........Anyway, it's going into the oven at lunchtime.

Woo hoo! I'm turning you into a cottage cheese minion! Bwahaha!

Last night I would deem a success, but the recipe needs tweaking. The greek salad was really good! The tzaziki was phenominal! And quick to make! The burgers need something, I'm not sure what. I used cummin, corriander, cayenne, salt and pepper and fresh parsley and oregano. But they just didn't have the gyro flavor.

I am definitely making it again, gyros are one of my favs, but I will have to figure out what to do with the meat.

Hubby was less than delighted. Doesn't want it with salad, couldn't we just get it from take out? Nope, not while I control the kitchen!!

Tonight is a california blend chicken casserole. New recipe. We'll see how it goes.

Oh, with the gyros, I do admit that it took me about 45 minutes to prep and cook. I don't mind that some nights. I am a pretty quick cook, try to chop this while that is cooking and blend things while something else is going on. This one just took what it took!

Will post it when it is just right!

Tonight will be a mixed green salad with tomatoes, wild caught salmon, gorgonzola cheese and avocado puree. Probably add some black olives and marinated artichoke hearts and Ranch dressing.
