Baked fish, baked with a bit of butter and/or olive oil on top, and a dill sauce made with part mayo, part sour cream, and lots of dill; a romaine salad, perhaps with some jicama and red bell pepper for crunch, and possibly some roasted broccoli. And a pitcher of iced tea.

Tonight, I'm doing stuffed peppers. I use cooked cauliflower run through the food processor for the rice, and everything else is mostly the same as traditional, except you don't need as much liquid because you're not cooking rice.
I also like to cook up extra filling when I make these. Just freeze some, or pop in the fridge, and heat up a bowl for a quick, easy meal.

next time, you may want to try some turnips in slow cooker too, if you haven't done that before. when i do roast in the slow cooker, i used sliced turnips on the bottom, and cooked like that, they are very difficult to distinguish from potatoes.

I think I'll make Taco Bake!

I originally planned on cooking my teeny, tiny spaghetti squash and topping it with sauteed ham, cheese and alfredo sauce but now I'm thinking taco bake sounds really good!

I've got a drs appt. So dinner is green salad and some tuna from a can.

Gosh, I really get ideas here! On Friday (or was it Thurs?) I had to make my shopping list and came here for meal ideas. IT ROCKED!

Yesterday's dinner was grilled Mahi and grilled sea scallops with a large salad of freshly picked romaine and raw broccoli (from my sister's garden). store bought tomatoes cucmbers, tiny bit of carrot and my cheat of a half an ear of corn. Best part was I din't have to cook or (Lord forbid) pay for this meal. LOL

Gosh, I need to make a list to see which houses I should invite myself over to....LOL...

Leftovers for me tonight too, Dixie. When I was a kid I hated leftovers, now I love them....no cooking for me!

I'm a big leftover fan now, Donna, for the very same reason...And Linda, that's exactly how I often decide what's for dinner: what on Earth can I make with whatever's in the kitchen?! Come up with some decent meals that way, though.

I've got a tiny spaghetti squash for dinner and will top it with deli ham sauteed with garlic and cayenne, alfredo sauce and some cheese. I used to make this with pasta and now I just do it with the squash.

Last night was meatballs served over french cut green beans. Don't know why, but they have the same consistency of pasta for me, so there you have it!
