Tonight will be a 3 egg omelette stuffed with ham, swiss cheese, and asparagus. I'll have a few blueberries with whipped cream also.
The postings about the spaghetti squash have been great and I'm going to pick a couple up today. Thanks.

I never would have thought of that, Mab...do you put sauce on it, too, or just have the meatballs and the green beans?

Last night I had my leftover stuffed pepper stuffing. Tonight, I have no idea what I'll make. Have to puruse the freezer after while and thaw something.

Dixie,

I put the sauce on the green beans and the meat balls. Try to use sparringly because I am still using regular pasta sauce instead of the lc version.

I know it sounds....well....different, but for me it is a great fit! LOL! Who knew this is what I would be doing one day...trying to find all of these healthy substitutes! LOL!

Deb and Linda got me turned on to the spaghetti squash, so tonight it's spaghetti squash with a creamy sauce of ricotta, garlic, olive oil, and maybe a few leftover ham bits thrown it. Very decadent!

It all sounds so good!

They once polled a large group of professional chefs asking what their favorite meal was. 40% said " A well roasted chicken". Probably because they cook and eat elaborate food all day at work. But I find a roasting chicken is one of my favorte meals. so Guess what's for dinner. Yes! With asparagus sauteed in olive oil and garlic and a large green salad (which I've already eaten).

I have a strong suspicion what I will have for dinner, but I won't find out until I get there. I have a company celebration dinner tonight at the best steakhouse in town. I suspect that I will have a salad, steak, and whatever l/c veggie I can substitute for a potato. There will also no doubt be a glass of wine sometime as well.

breaded and fried chicken tenders and a HUGE-A-MONGUS romaine salad with a few baby carrots and green goddess dressing! Dessert will be a serving of 70% dark chocolate with 8-10 almonds to go with.
Color me happy!
(for the breading for the tenders I use Maggie's cereal mix(dry), with season salt, garlic powder and black pepper mixed in. Dip the tenders in a egg & cream wash, then bread them up and fry them in cannola oil.) YUM-O!

I'm having dinner alone tonight so it's a ribeye for me! Maybe some fried green beans to go with it. And maybe a cream cheese muffin for dessert.

yes i love the smell of a roast chicken.

Gotta Love a good steak Henry and Mamagif!

Trouble with roasting a big chicken for one person is you have to eat it for breakfast lunch and dinner until it's gone. well you could skip a meal of it. I try to vary it enough that it doesn't get monotonous. For dinenr tonight I made a chicken, blue cheese and bacon quesadilla with asparagus tips (leftovers).

when i have leftovers, i try to serve it different ways, too, so dh and i don't get sick of it. (my kid usually cooks for herself. i don't make mac and cheese all the time...lol) for chicken, i might make quesidillas, a pita ranch-chicken sandwich, chicken with cheese sauce over veggies, dump some salsa over it, etc...if i can dump something on it or stick it in something, i consider it "different." next time, i'll try some of susie's spinich-chicken, too...

for tonight, we're having thin pork chops w/onions and mushrooms, spicy sausage and cream cheese stuffed mushrooms, and some stir fry veggie mix...still in the oven!

Dinner will be a breaded chicken breast parmesean (breaded w/almond flour and parmesean cheese), a side of Dreamfields linguini w/low carb marinara sauce, and asparagus.
