What's For Dinner May '08

"Low Carb Cooking" at Low Carb Diet Support: "Nah-Robb's Cobb's salad sounds so much better than Katalina's-LOL! Going out tonight to a French restaurant-this should be interesting-probably get a chicken dish of some sort-or maybe not. And a nice glass of French wine....."

Gonna make a Blasted Chicken with LC slaw, baked beans for DH, and I'll devil some eggs.
Working on a shortcake recipe, so maybe dessert will be LC strawberry shortcake. Still tinkering and tweaking...

Roasted chicken tonight rubbed with olive oil and garlic and stuffed with onion, lemon, and fresh rosemary. Going to try the fauxpotatoes for the first time-they sound delish.

Last night was pork chops, pan seared with a mix of veggies from the farm near my sisters house. So fresh! And full of dirt! LOL! I forgot that veggies don't come in nice neat bags from the supermarket!

Tonight I have a meeting, so I brought eggs to work to heat and eat before I go! Lots of hot sauce to make them taste good!

Never thought of eating HB eggs with hot sauce. Good suggestion as they're not my favorite thing to eat and I usually use Dijon to help with the flavor. I'll try some tobasco-thanks for the idea.
Tonight I'm having left over roast chicken and the mother of all artichokes. Will dip in olive oil seasoned with salt and pepper. Yummers!

Yesterday's dinner was chinese restaurant seafood combo. Jumbo shrimp and scallops with chinese vegetables. also had 2 huge lobster claws and some lobster tail meat. My BIL and Neice's dh went out and bought about 10 pounds of lobsters and said sorry at $15 a pound if you want one buy one and we'll cook it. LOL I had to agree that would be too much to spend on me. Hence the compromise of chinese takeout food. But in the end all those 2 pound plus lobsters yielded much leftovers so I got some anyway. Delicious!

Tonight I'm going to try using coleslaw mix...frying it in garlic and oil and adding cooked shrimp. I find regular cabbage takes too long to fry so maybe this will work...wish me luck.

Donna,
that's what I use when I make *eggroll in a bowl*. The trick is putting the mix in a thin layer, I think. Then when it's stir fried almost done, I push it off to the side of the skillet and add my shrimp and sautee for a few minutes.
Totally YUM-O!!!


tonight is taco salad with homemade LC FauxCatalina, salsa, sour cream, ground sirloin and sharp cheddar sprinkled on top. YUM-O again!

Dijon pork chops and string beans, (frozen). I picked up a teeney weeney carton of fresh raspberries and they are for dessert.

Last night we picked up burgers from BK because I wasn't up to cooking after surgery. I tossed the bun and was ok eating the burger, lettuce and tomatoes.

DS asked if I would make cauliflower crust pizza with alfredo sauce and chicken toppings for dinner so that's what we'll be having.

TOnight is cottage cheese. I have a drs appt. at 7 so that is what I could think of for an on the go item!

Tonight marks the official opening of Taco Salad Season. That is when I add taco salad, usually once a week, to my weekly menu planning. My taco salad consists of lettuce, taco seasoned ground beef, tomato, green onion, jalepenos, ripe olives, and a little cheese, topped with a little picante sauce and my l/c sweet french dressing.
