The barbacoa (beef cheeks) was marvelous! I highly recommend anyone wanting a good meal to try this. We had it in lc tortillas, with coleslaw. Beef cheeks will be on my shopping list in future.

The meat is very soft & tender, and a nice, mild taste. Melt-in-your-mouth tender. Very yummy.

Nita-there's just something about the words "beef cheeks" that brings up all types of disturbing images. My evil mind is atwitter.

Love all the great ideas in here....!!

Dinner for us tonight was taco meat....hamburger flavored w/ chili powder..LOL
Kids had burritos made with it , Hubby had Taco meat w/ cheese, sour cream, green onions, salsa over baby greens
Me I wasn't in the mood for the lettuce....so I just put some meat, cheese, salsa, sour cream and green onions in a bowl and at that. It was good and I got full fast.....I love Induction I am never hungry!!!!

I am making SF crustless jello pie for a sweet treat if I feel like I need one.
Recipe as follows...(sorry if it is already someplace here)
1 pkg sf jello
1/4 cup boiling water (dissolve jello in this)
Add to the dissolved jello......2 containers of Blue bunny LC yogurt, and 1 container of SF cool whip (thawed) Mix together well put in bowl and chill for 1 hour....!! YUMMY

Cheeseburger with red onion, lettuce, and tomato. A green salad with home made bleu cheese dressing. And the wonderful stuffed strawberries for dessert.

Thanks for the jello recipe-sounds perfect for the hot days ahead.

I think I'll be making creamed chicken tonight. I'll cook the tiny spaghetti squash I had planned to use the other day for my veggie. I wonder if I can talk DS in to at least trying one little taste of it?!
