Tonight is broiled bay scallops. Giving hubby a potato. I'm having SF coleslaw with mine.

Roasted chicken from the supermarket and a green salad with grape tomatoes. (did you know that even the darn roasted chicken has a bit of sugar added? -I've never added sugar to any chicken I ever roasted-GRRRRR!)

I got a great buy on spare ribs, but I had to buy a 30 pound box so I have been cooking them all day. Tonight's dinner is BBQ ribs, l/c baked beans, slaw w/hot bacon dressing, and 2 stuffed strawberries for dessert.

Going out with friends to a Mexican restaurant tonight. I was thinking of getting a big taco salad and just eating the innards and not the shell. Wish me luck.

I'll be making a big salad with avocado, feta, red onions and anything else I can find to toss in! And I'll have a burger patty to go with it.

Since it's
Cinco de Mayo
I think we'll have sirloin grilled up, then made into fajitas
with grilled green peppers and onions, served on LC tortillas with optional sides of sour cream, red salsa, and grated cheddar cheese.
I'll consider adding a *Marita*...
If we decide to dine out, we'll have the same thing at our favorite lil' Mexican cafe' we often go to.

Hey Shelley-What a festive looking posting-makes me want to get up and dance! I'm having grilled chicken thighs tonight-they are marinating in olive oil, lime, and spices as I write this. Will have multicolor bell pepper salad along with it and some stuffed strawberries.

I did not plan well for Cinco de Mayo. Dinner will be a routine oven fried chicken breast, Dijonaise & cheddar crusted whole baked cauliflower, green beans w/onion and tomatoes, and 2 stuffed strawberries.
