| Shelley's Blueberry Cer-co Muffins I've hit upon what I think, is a pretty good *old fashion* tasting blueberry muffin. I use a combination of Maggie's dry cereal mix and Coconut flour,(deriving "Cer-co" as a combination of Cer(eal) + Co(conut flour)), and the texture is actually pretty good as well, IMO. I'd classify it as a moderately dense and hearty muffin. This makes 2 servings. Mix dry ingredients together and set aside: 2 T Maggie's cereal, dry 2T coconut flour 1T vital wheat gluten 1 tsp baking powder 1/2 tsp steviaPlus 1T erythritol Mix wet ingredients together: 1/4 C egg beaters(I use this for liquid volume; you can use 1 egg, well beaten) 1T Light Olive Oil 1 tsp almond extract...very important! This is what gives the *old fashion taste*. 6 drops of liquid splenda 3T DVSF vanilla syrup + 1T water Add liquid to dry ingredients and stir until well mixed. Add in: 1/4 C frozen blueberries, thawed in microwave PLUS the juice of the berries. Fold berries in gently. Spray 2 pyrex ramakins or one, 2 cup glass measuring cup with butter flavored Pam/cooking spray. Microwave 90 -120 seconds on high. Time may vary per your MW oven. If you bake them in the pyrex ramakins, they are a little flatter, and look like a little mini blueberry breakfast cake. I've also used lemon extract for the lemon-blueberry taste, but to me, the almond extract makes the muffins taste more like a grandma's old fashioned bb muffin. I tripled the recipe this morning and baked them in my silicon muffin pan in the MW. Again, timing was an issue, but to the best that I can tell, I cooked them for 3 min; rotate the pan 1/4 turn and cook another 3 min; rotate again, and go another 2-3 min. They will lightly spring back when done when you touch them. Nutritionals per serving: 200 calories 11g fat 15g carb 7g fiber 11.5g pro 8g net carb Obviously not an Induction food item.

| OMG Shelley-how do you come up with these great ideas? And the photo of the muffs look yummy. A bit high in carbs for me for everyday use-but these muffs will be perfect for my weekly read the Sunday newspaper and drink waaay too much coffee marathons. Can't wait to try them-thanks so much. |

| Katalina, These muffins are moderately dense in texture, but really pretty *hearty*. I usually have one with a pat of butter and a scrambled egg, or I will have a muffin with a touch of cream cheese and maybe a sausage patty or some bacon. These combos are really filling and have *stay with ya* power! As much as I would like to, I do NOT have them every morning. Usually 2, maybe 3 times a week; definitely on my work days because they are so portable. Enjoy! s

| Shelley-I tried the muffin yesterday morning at it was yummy and quite filling. I spread it with cream cheese and enjoyed every morsel. Thanks again. |
