had dreamfields "hamburger helper" tonight: elbow pasta, mixed with hamburger and spagetti sauce. LOTS of weekend leftovers now.

I LOVE my slow cooker....I put a nice turkey breast to slow cook all day. So, dinner will be some turkey breast with cauliflower, broccolli mixed veggies. Also, I'm a multi-cooker on the weekends so we have a pork roast that will be cut in two and then boiled slowly to be put on the grill with some hamburgers for DH, boca (YUM) burgers for me though. DH won't touch the lower carb stuff....silly rabbit. I hope everyone is having a GREAT Saturday....it's in the 50s up here in semi-sunny Juneau AK today.

Dinner tonight will be a red leaf lettuce salad a piece of Deep Dish Pizza Supreme and a piece of l/c strawberry-rhubarb pie. (This is the first time I have ever made a baked in the shell pie, and a double crusted one at that. I never have made a baked in the shell pie before because I could never do a flakey pastry crust and DW always made the best crusts. However, with my l/c crust recipe, I can now do flakey crusts so I decided to try one today. It looks great, but we haven't cut it yet so I don't know how it tastes and whether or not I added enough l/c sweetener and thickener.)

Ah, Carla, I love (but underutilize) my slow cooker myself. In fact, only this morning, I was going through my Dana Carpenter Slow Cooker recipe book thinking I'd like to try more slow cooker recipes. It's so nice to have dinner ready without the fuss in the evenings.

Let us know how your pie works out, Henry! My mom always made the flakiest pie crusts I ever had. She'd even cook make extra crust just to eat with butter, because it was good even plain....She always used 7up instead of water in her crusts, but I'll bet diet soda would work as well; and of course, you couldn't overwork it, as that would make it tough. Like all of it, I think it's an aquired skill.

Last night, DH had lefovers and I had some eggs and sausage in a pita, because that's what I wanted. Tonight, we'll no doubt still be on leftovers.

Dinner was Salmon poached in white wine, spinach pie, and a piece of l/c strawberry rhubarb pie for dessert. The strawberry rhubarb pie is very good. Although it is quite good, I will tweak the recipe just a little next time. The sweetness and flavor is right on. The crust worked well, though next time I will use an aluminium foil collar to keep the edge from getting quite so brown. I will also add 1 more tsp of thickener though dw says that some strawberry rhubarb pies have a little more juice than others, so you can never be sure on the thickener until the pie is done, and then the next one will be different any way. I will post the recipe.

Tonight will be roasted chicken. We bought a 10 lb bag of leg quarters, so they'll get put in the oven at lunch to roast slowly this afternoon. What we don't eat will get divvied up for other meals this week. I have some romaine I need to use up, so we'll probably have a salad with it. And I think I'll make a few cheese crisps for croutons on the salad. If not that, then some pork rinds.

I will poach some salmon in white wine, garlic, and tarragon when I get home tonight and pair it up with some of the leftover spinach pie and then a piece of strawberry rhubarb pie for dessert.
