Chili with black soybeans, and lc tortillas, sliced into tiny slices, simmered for a minute in the chili, and each bowl topped with diced Colby cheese. Mine had extra chili powder sprinkled on top.

A cheeseburger with all the fixings except the bun. And leftover cucumber salad from last night. Fresh cherries for dessert.

Tonight will be the ubiquitous "clean out the refrigerator" Taco salad, as we close down the kitchen before leaving town tomorrow for a 5 day weekend in St. Louis. DW just told me that she only served 1/2 of the 3 minute chocolate cake I made for her meeting today, so I will have the other half with some splenda sweetened chocolate caramel sauce for dessert.

Friends are coming over tonight-rib eye steak, fauxpotatoes, green salad with roasted peppers and mushrooms. Red wine and stuffed strawberries. Yum.

Back to basics tonight - pork roast will go in the oven at lunchtime, on a nice low temp to cook slowly, and I'll make a big salad, with a bit of onion, tomato (if there are any in the garden), black olives, and a bit of cheese, or perhaps some cheese crisps, for faux croutons. And a huge glass of water.

I'm thinking of Kizzy's focaccia brushed with olive oil and topped with fresh rosemary, mozzarella, and parmesan. I have some fennel salad left over which will go nicely with the focaccia. A slice of watermelon for dessert.

I'm going to do a bunch of cooking ahead today so I'll decide on dinner once I get done. I'm thinking ribs sound good along with some cauliflower with feta casserole.
