Chicken breast marinated in Italian dressing and rolled in powdered ranch dressing. (Forgot the name of the recipe) String bean and roasted pepper salad with red onion and garlic. A slice of watermelon for dessert.

Kat, that sounds like a very easy, tasty idea! I LOVE easy!

Last night's stuff Chicken didn't quite do what I wanted...in other words, I didn't get the cutup part right! So instead, I layered the chicken, swiss and spiniach in a casserole dish. Parts were a bit dry--too much browning, but overall, very good.

Tonight, it will be more of the same.

Tonight, DW is making her "oven fried" chicken breast (chicken breast brushed with egg white then rolled in parmesean cheese and spices and baked). I will make twice baked fauxtatoes and broccoli when I get home.

we'll be having LC chicken fried steak, cauli mashed fauxtatoes for me, DH will have a mw baked potato, and our other veggie will be Kentucky wonder green beans cooked with bacon.
dessert will be a portion of mixed berries topped with vanilla yogurt sauce...and DH will have whatever since he doesn't like yogurt...his loss! LOL!

Tonight is taco salad night at our house. Last night my husband grilled chicken and made green beans fresh picked from our garden. This was the first time this year and they were . I am going to make an OMM with salsa and cheese to compliment my salad since I will not be eating chips.

I keep telling myself that we never plan to fail but we fail to plan!

just got back from our n'hood smoke/BBQ house with some good ole smoked beef brisket.
I'll add LC slaw and MW baked beans for DH.
dessert will be fresh strawberries topped with sweetened vanilla cottage cheese. YUM-O!

Last night I made some heat and eat salmon that was extremely good, over a romaine salad with a few fresh tomatoes from the garden, a bit of jicama and asian dressing. Way too good.

Tonight I might make a taco salad. It's one of dh's faves.

Chicken breast stuffed with provolone, prosciutto, and roasted peppers.(just picked up the cheese and prosciutto in NYC-yum), a spinach salad and a few grapes for dessert.

Dinner tonight will be a lettuce salad and something I call Mexican mousaka. (I took a recipe for Mousaka, converted it to l/c and then tweaked it to use taco seasoned ground beef w/picante sauce and sour cream layered with the traditional eggplant and topped with a bechamel type cheese sauce.)

I have a new recipe for pork tenderloin with lime vinegarette I'm dying to try. I'll serve it with slaw with a creamy lime dressing, and DH will get corn on the cob with his dinner. Strawberries topped with sweetened ricotta with lime zest for dessert.
Can you tell I'm in love with limes at the moment??? hehe!
