I found this recipe on another site and it really is so good I had to share it with you all.

KALE CHIPS
Ingredients
1 tablespoon apple cider vinegar
2 tablespoons salt (this makes them pretty salty- you may want to reduce the amount, then sprinkle the chips with salt when they are done )
3 tablespoons olive oil
2 bunches kale, rinsed with stems removed

Directions
1. Cut kale into 2 to 3 inch pieces.
2. Mix vinegar, oil, and salt in a large bowl then add kale and mix by hand.
3. Try to get all the leaves covered.
4. Place on baking sheets (I like to use parchment paper for easy clean up) and bake at 350 F until they are crispy.
5. After about 20 minutes, if it looks like they are not sizzling a bit or getting a little crispy, turn up the heat to 400°F.
6. Time for baking varies depending on the size of your chips and desired crispness.
7. The outer edges cook quicker than the pieces from near the stem.


I used half the amount of salt called for in the recipe and they were WAY too salty. Next time I would just sprinkle salt on them when I take them out of the oven. But...aside from being to salty...these really are crunchy and very much like potato chips. I will definitely be making these again. I read that these don't keep well. they apparently become soggy if kept overnight so this would be something to make just enough to eat at the time. Of course I read that AFTER I made them so I will know tomorrow if they keep. This will be something I will make to take to the movies or to a ball game. They really are like eating chips!

So...Update...
I put the "chips" in a Gladware bowl with a paper towel in the bottom and a paper towel on top and sealed it with the lid. They are still crispy-licious this morning. This recipe is most definitely a keeper!

Get outta my head! I've been lurking on the site lately, getting ready to re-commit to my LC WOE, and in the back of my mind for the past few days, vaguely wondering how my nephew made those great kale chips he served at my sister's house a couple weeks ago.

If this isn't a sign, I don't know what is, LOL! I'M BACK!

Kale......I remember my mom cooking kale, and it smelled absolutely awful. But that was years and years and years ago. So, maybe I'll buy some & try it. Who knows, I might like it this time around!

I saw Sandra Lee deep fry fresh spinach, so I suppose it would work with most any kind of greens. Guess we'll need to experiment.

Nita, I was at my sister's house when my nephew was making kale fries, and it did not smell at all (other than a general cooking sort of smell). I don't even particularly like kale, but the kale fries were great! Light and crispy -- definitely couldn't eat just one! We had 5 people there and were using a big Tupperware bowl, and I'll bet he had to refill that bowl at least once for each of us. They were very addictive.

Ok...for anyone who is wondering. Today is the second day after making these. I saved some in a plastic bag just to see how well they'll keep. I am happy to report that they are still crispy and delicious this morning, two days after baking them. So... I think if you make sure to get them good and dry when you bake them and let them cool completely before storing them, they keep nicely in an airtight container. They do smell when you first open the bag though...but they taste yummy.
