Default A Little Coconut Cake (with pics!)

A Little Coconut Cake LC

Makes 2 servings

Mix dry ingredients in a small mixing bowl and set aside:
2T almond meal(flour)
2T coconut flour
1T unsweetened coconut
1T vital wheat gluten
1T Erythitol
½ tsp steviaPlus
1 tsp baking powder

Whisk wet ingredients together in glass measuring cup:
¼ C egg beaters (can use 1 large egg, beaten)
1T canola oil or any light vegetable oil
1T sour cream (I use light sour cream)
6-8 drops liquid splenda
2T SFDV Vanilla syrup
1T SFDV coconut syrup
½ tsp vanilla extract

Spray a large ramekin(6” diameter works well) with butter flavor cooking spray.

Pour whisked, wet ingredients into dry ingredients, and mix well. Pour into prepared ramekin. Microwave for 90 seconds on high; rotate dish a quarter turn, and microwave and additional 60 seconds, or until cake springs back when lightly touched. Let sit 2-3 minutes, then turn out on wire rack to cool.

Frost with:
3 oz light cream cheese, at room temperature
1T smart balance(or butter) at room temperature
1 tsp SFDV coconut syrup
¼ tsp vanilla
Whisk all together; add a drop or 2 more sfdv as needed to get a medium “frosting” consistency.
Split cooled cake in half, horizontally. Use half of frosting on bottom half, spreading just to the edge. Place top half of cake onto bottom half, and frost top only with remaining frosting.

Top cake with:
1T unsweetened coconut sweetened with sfdv coconut syrup and a few drops of liquid splenda. (I placed coconut in a very shallow dish, then poured a Tbsp of the sfdv syrup in a spoon. Then add the liquid splenda to the tablespoon before pouring in on the coconut. Let sit for 30-40 seconds, then, worked the liquid into the coconut with the back of the spoon, until it resembles “real coconut”. It should be moist, but yet not in one large clump. Sprinkle onto the cake.

Nutritionals for 1 serving, or half the cake:
233 calories
16g fat
11g pro
13g carb
7g fiber
6 g net carb

With ½ frosting recipe:
113 calories
9g fat
5g pro
3.5 carbs
0.5 fiber
3 net carbs

Half the cake with frosting: 9 net carbs.
If you can only eat half of the half…it would be approx 4.5 net carbs.

Oh good, Kat!!! Let me know how you like it, and better yet, if you are serving it to non LC-ers, what they thought.
I do much better when I make the small cakes vs the 12 serving size, honker cake, yanno?
'Cause, those cakes just don't last for *12* servings in this house! LOL!

Shelley-the cakes were a hit. I had a group of fellow Food Bank volunteers over for coffee. They all know I'm on Atkins and told me not to buy any cake or cookies for them. Very noble-lol! I made 3 of the cakes, stuffed strawberries, and OMM's made with a combo of flaxseed and Carbquik, with blueberries, walnuts, and banana syrup. Not a crumb was left over-they couldn't believe I could eat like this on a "diet". Thanks again for the recipe-it's a keeper.

I think I've got all the ingredients here so I'll be trying this tomorrow! BIL/SIL are coming to help start building our new deck and this would be a good treat with lunch. They are not low carbers but I'm sure this will be a hit!
