    Question Faux-tato Salad Recipe???

    Does anyone have a recipe for Faux-tato salad? I was considering using my tried and true potato salad recipe and sub in cauli instead. Seems to me it should be good since anything else I have substituted cauli in has been amazing.

    Cauliflower can be use in place of potatoes for a salad. So can turnips or rutabagas. Just be sure not to overcook. Cook until just barely tender. Otherwise you'll get that strong taste that turns people off of those veggies. I've made it with all 3 veggies, and each is unique, and very tasty.

    I've just used my regular potato salad recipe, substituting cauliflower. It was pretty good. I might try it with turnips...or those long, white radishes that look like giant carrots. Good idea!

    Karen, here is a link to a german style fauxtato salad.
    German Style Fauxtato Salad
    When I do my regular fauxtato salad, I prepare the cauliflower the same way, then add diced onion, celery, sliced bamboo shoot tips, splenda sweetened pickle relish, hard boiled egg, and perhaps some red bell pepper, then use mustard and mayo to taste for a dressing.

    I've recently tried it using frozen cauli. Hmmmm. I liked it, but would use fresh if I wanted to introduce this to people for the first tiem. With fresh, you get more of the right angled square cuts from the fat stem
