Salad Help with Recipe Amounts - Waldorf Salad

Howdy, Gang. As you may (or may not) know, I'm working on getting all the recipes back up from the old version of LCE. Some of this is a bit tricky, because certain information got lost in the import process.

I'm working on a recipe for Waldorf Salad from the old recipes, submitted under the name bjdilli. I will try to use the email I have on file to check this, but it's old and this isn't an active LCE member. Some of the ingredient amounts are muddled.

I was wondering if any of you all recognized this and could fill in the missing amounts for me?

Here's what I've got...anybody have any idea what the Raspberries, Walnuts and Vinegar amounts should be? Thought maybe somebody has used this and would know.

Summary - This recipe uses jicama in place of apples and raspberries in place of raisins. The raspberries give the salad a very nice pink color. This is a very yummy salad!

4 large stalks celery (11"-12" long)
1 C. Jicama
? C. Raspberries
? C. Walnuts
1 C. Mayonnaise
1 T. Splenda
1 ? t. Vinegar

Chop celery, jicama, and walnuts into small pieces, dump into bowl and set aside. In another small bowl mix mayonnaise, Splenda, and vinegar to make the dressing. Add the dressing to vegetable and fruit mixture, mix well, and chill for several hours.
Total carbs 38.5, fiber 19, net carbs 19.5. Recipe makes 4 servings @ 4.9 net carbs per serving.

I guess one of us will have to play with this recipe so we can give you the right amounts.

I've made something similar, but used fresh blueberries instead of raspberries. Don't ask me about amounts, though. I'm a bit-of-this, bit-of-that cook. But, I'd guess 1/2 cup for the berries, walnuts and mayo. And probably a tsp for the vinegar. When I can find some jicama, I'll play with the recipe and let you know; however, I haven't seen it in the store for at least a month or more.

Dixie, are you sure of the mayo amount? 1 cup seems like a lot for the quantity of other ingredients. I suspect that if I were to try this, I would only use 1/2 cup of walnuts, 1/2 cup of raspberries and start with 1/4 to 1/2 cup of mayo.( I would also substitute 1/2-1 tsp of lemon juice for the vinegar, or try 1 tsp of raspberry vinegar. My guess is that the vinegar is intended as an acid to help keep the jicama from turning, rather than adding any discernable flavor to the dish.)

My recipe is more like this:

1 cup celery, chopped
1 cup jicama, chopped
1 tablespoon lemon juice (plus a drop of sweetzfree)
1/4 cup mayonnaise
1/4 cup berries (rasp, blue or cran)
1/4 cup walnuts

The drop of sweetzfree is because the jicama is intended to replace apples in the original waldorf and this (IMO) makes the finished product more like the original.

The vinegar is 1 tbs. It is to add flavor, just like you do in cole slaw and potato salad.

Thanks for the input on this one, folks.

Nita, I am just like that myself. I just dump stuff in until I think it tastes right.

Henry, I don't have a lot of confidence in the amounts, no. For the recipes where there are clear issues with amounts especially (in all the copies of them I have), it seems usually the stuff that doesn't have the weird characters is what was there, but I'm just not sure.

And thanks for the other imputs as well. Since it's an anoymous recipe, I may morph it into something that seems reasonable to our more experienced LC cooks.

Basically, I'm trying to get as many of the ones we had up as possible. And some recipes are clearly better quality than others, but I'm not enough of a cook to always know...
