What's for Dinner August 08?

Tonight will be Greek style diner food at the quarterly board meeting of my condo association. Probably have chicken or fish with a couple choices of low carb vegetables. At least it's free.

Tonight will be a large portion of my dwindling supply of whole soybean pasta with a sauce (gravy for New Jersey Italians) made of a couple of fresh tomatoes, garlic and lots of snipped herbs from the back deck, sauteed in olive oil. Some fried zucchini "coins" and grated cheese on top. Enough to be divided providing for a nice lunch tomorrow.

It wasn't on the 8th, but we did have a great Salmon, with a little Dijon/olive oil mixture drizzled over it, and served with lots of mixed vegetables. The kids LOVED it, and can't wait for me to make it again.

I buy the whole salmon, with no head, and cook it up myself. Less processing!

i have the recipe if you want it.

As I reopen the kitchen after a week on the road, tonight's dinner will be a lettuce salad and Dreamfield's spaghetti w/meat sauce.

For dinner, as we are hosting our book club I will just nosh on assorted crudite, cheese, deviled eggs, nacho ordinary roll-ups, ham roll-ups, and a piece of something I created that, before I made it, I decided to call "almond joy pie". However, as the chocolate filling is a lighter chocolate color than the namesake, I may have to think about renaming it.

there is a LOT of really good sounding stuff in this thread. i think i'll review these posts when i'm making out my grocery list...

Tonight's dinner will be a lettuce salad and 1/2 of a chicken roll (flattened chicken breast coated with ricotta & parmesean cheese then rolled with sliced chicken andouille sausage and mozzerella cheese) served over Dreamfield's linguini w/marinara sauce.

Dinner tonight will be some fresh tomatoes w/mozzerella drizzled with evo and a little balsamic vinegar, 1/2 of an egg plant stuffed with shrimp and crab, and a piece of Almond Joy Pie.

I was also in easy mode so I had a Big bacon cheddar cheeseburger with a fat slice of fresh garden tomato! It was delicious and the best part was I only had one pan and a spatula to wash since i used a paper plate.
