Salad What's for Dinner August 08?

New month, so I thought I'd start a new thread.
I have NO idea what I'm doing for dinner tonight, but I'm sure I'll figure it out. Usually do.

Tonight's dinner will be a lettuce salad and the last of the shrimp in chunky tomato cream sauce served over cauli-rice.

My supermarket's sub stand has just added low carb wraps to their bread list. so I bought a turkey and provolone wrap with lettuce and tomato, oil and vinegar and oregano. Probably will have a salad with it.

Yesterday I made a boring left-over casserole with a bunch of miscellaneous veggies, some ground beef seasoned with Ranch dressing mix and sour cream, and cheese. It was edible and filling, and sometimes that's all I can manage. I'm feeding a family of 5 right now (there are really 6 of us, but my 17yo son is the US this summer).

Today is going to be a pork roast in the crock pot, with some kind of veggies--whatever is left in the freezer. It's getting close to grocery-day.

Rob, I suspect you ment to thank Amber. I am in serious "clean out the refrigerator" mode as we are leaving Thursday for 6 days in New York City. With the extreme heat we are having, I planned my menus since Saturday around cold salads that I could pair with grilled meats, all cooked on Saturday before the heat really built in. Tonights dinner will be BBQ pork steak, sliced tomatoes from the garden, broccoli-cauliflower salad, and Dreamfield's penne pasta salad.

LO Henry! You are correct. eyesight does not improve with age nor does memory. so Thanks Amber! I will be having the fajitas tonight because I forgot about leftovers that needed to be eaten last night or discarded. With food prices so high I cringe at the thought of wasting any.

Oh yeah - I hear ya, Rob. I am the leftover queen! Want to make the best use of all the food.

Have a great trip, Henry!

Last night, we had pork steak and veggie mix. Tonight, I'll be mixing leftovers from that and doing something with the dreamfields a couple of days ago, but i'm not sure what yet. I may put some alfredo sauce on it and just plop those porksteaks on top or something...lol

Your welcome for the fajita idea Rob. I just love them!

Last night was grilled chicken with alredo sauce and broccoli and cauliflower.

Tonight will be chicken breast strips breaded with parmesan cheese and fried to make mock chicken tenders. I will dip them in hot sauce and a little ranch. Yummo! O and greenbeans with bacon and onion for my vege.
