Coffee a tasty LC Bran Muffin...really!

My Real LC Bran Muffins
By Shelleyg

Mix dry ingredients together and set aside:
¼ C. unprocessed wheat bran (I use Bob’s Red Mill)
2 T. coconut flour
1T. Vital Wheat Gluten
1T. erythitol
½ tsp. SteviaPlus
½ tsp baking powder
5 pecan halves, broken in pieces
Dash of ground cinnamon, ginger, and allspice

Mix together wet ingredients:
¼ C egg beaters(for liquid property; can sub 1 whole egg, beaten well)
1T. oil
2 T DVSF Gingerbread syrup
6 drops liquid splenda

Add wet ingredients to dry, mix well. Batter will be moderately “stiff”, so cooking time is really short.
Divide batter into 2 ramekins sprayed with butter flavor cooking spray.
Microwave on high 60-80 seconds. Will spring back when lightly touched when done.
If you over cook these, they will be pretty dry. An extra 1T of oil helps, but adjust calories and fat accordingly.

Makes 2 muffins.
Per muffin:
204 cal
13g fat
10g pro
16g carb
9g fiber
7g net carbs
