I'm still working on the roast pork and curried cauli-rice pilaf, but changed the veggie to broccoli and added some cranberry relish.

Tonight's dinner will be a Taco salad. This is a weekly staple in my menu planning from May through September. However, as we transition to Fall, it will go into hiatus until it is time to transition back to Summer.

Tonight will be chicken quesadillas made with low carb totillas! Yummo!

dinner last night was taco salad...and I refuse to *give it up* in the winter! We love it all year long at our house!

Tonight's dinner will be 1/2 of a chicken roll (flattened chicken breast, coated with a mixture of parmesean & ricotta cheese, then topped with sliced andouille saussage and mozzerella cheese and rolled like a jelly roll) served on top of Dreamfield's linguine w/marinara sauce and a side of something I am calling Rustica Roasted Brussel Sprouts and 1/2 of a tart new crop Johnathan apple, my favorite apple.
