Chef Wing-It is going to make an appearance for dinner tonight. My original plan was to make a l/c pastichio using Dreamfield's macaroni. However, I have decided to change the seasoning of the meat filling from Greek to Italian and change the plain baked bechamel cream sauce topping to a parmesean cream sauce sesaoned with a little garlic and oregano. I will call it Pastichio Italiano and serve it with a small lettuce salad.

Last night was shrimp cocktail as an appetizer and a spinach salad with grilled chicken breast. Tonight i'm making soy pasta with meatballs and a side salad.

Dinner tonight will be meatballs in sour ceam and sherry mushroom cream gravy served over cauli-rice, and green beans w/onion and bacon.

Tonight i stuffed boneless chicken thighs with swiss cheese and sliced oven roasted turkey breast. Then wrapped each in a slice of bacon. If I'd known they were going to come out this good I would have made more than 2 so I could have leftovers.

Tonight was leftover Italian style meatloaf leftovers, with sliced tomatoes & cukes w/oil & vinegar on the side.

Grilled Salmon burger, topped with swiss cheese served over a bed of mixed greens and some chopped onion. Salsa ranch dressng on the side.

Last night I made something i never made before.. Took one bratwurst out of its casing and sauteed a little chopped onion until it took on a little color. added the bratwurst meat (chopped up) and cooked it through. I added a bit of fresh nutmeg and half and half and swiss cheese (it was either that or American cheese) and heated gently until cheese was melted and formed a nice sauce consistency. added some dreamfields penne and served. I forget what herbs i added but that can be switched around anyway. It was really tasty. Definitley will make this again. what should I call it? German Macaroni and cheese?

Rob, I'll have to think about a name for that.
Dinner tonight will be a lettuce salad, l/c breaded chicken breast parmesean and Dreamfield's linguini w/l/c marinara sauce.

I made a coupla things this weekend I really liked...

BBQ beef brisket in the crockpot: I took about 3 pounds of brisket and put in the bottom, cut up an onion and a green pepper and tossed on top. Seasoned with salt, pepper, garlic powder, 3 bay leaves, and fired it up. About 6 hours in, I carefully poured off most of the broth (saved it tho!), took the beef out and shredded it with a coupla forks, tossed it back in with the veggies and added a can of mushroom pieces and stems. Then, I mixed a cup of sugar-free ketchup, about 2 TBS worchestershire, 1 TBS lemon juice and 4-5 shots of liquid smoke, poured that on top and mixed it in and let it stew for another hour or so on low. Dunno the carb count, but its not much, and was insanely good!

Macaroni and cheese ramekins: Boiled 1/2 box Dreamfield's Penne, then I took 1 cup heavy cream and put it in a saucepan on the stove with some salt, pepper, a little garlic powder and about a tsp of dry mustard, turned the burner on super low and stirred constantly until hot. Then added about 12 oz cheddar cheese in batches until melted in. Divided the noodles into two ramekins and poured the sauce over them. Covered the top with more shredded cheese and nuked for about 5 mins. I didn't run the carb count on those either, but I only had about 1/3 of one of them and it made a really nice side dish for the beef above. It was plenty, and I'd probably stick with that serving size.

For dinner, I will be taking DW to her favorite Italian restaurant for her birthday. I will have a lettuce salad and their Atkins Special, char grilled chunks of marinated chicken breast in Alfredo sauce w/fresh spinach and proscuitto. We will return home for dessert where we will split a l/c mini Baked Alaska.

Dinner tonight was leftovers from monday night. Chicken in a mushroom cream sauce. reminded me of a chicken fricasee.
