Egg Crisp

"Low Carb Cooking" at Low Carb Diet Support: "After discovering the wonderful cheese crisp, I tried something different for breakfast this morning. I usually just mix a couple of eggs, throw some cheese on top, along with whatever else I have on hand ...."

Default Egg Crisp

After discovering the wonderful cheese crisp, I tried something different for breakfast this morning. I usually just mix a couple of eggs, throw some cheese on top, along with whatever else I have on hand (sausage, ham, onions, mushrooms, etc.) Then I just cover the pan with a lid until it sets. Well today I tried putting the cheese in the frying pan FIRST, then the eggs and stuff. I ended up with an egg crisp. The fried cheese really added a different flavor to the eggs. It was quite good. The only problem was it didn't cut that easily with a fork, so I had to cut it in pieces with a knife.

This sounds like it's worth investigating. I somtimes use a white. Domincan cheese I buy in New York specifically for frying. Queso Frio it's called I'm wondering if you fry the cheese on one side, flip, then put the eggs in. The result might be nice crust. It might even work for a quiche. Hmmmm

This is how you make the shells for low carb tacos by the way (just cheese - no egg)

If you shape them while they're hot/malleable, you can make decent shells
