Default What's for Dinner December '08

I will start December dinners with leftovers from Thanksgiving. Rib roast, l/c spaetzle w/cranberry-port gravy, stewed cranberries & pearl onions, broccoli, and a piece of Cranberry Velvet Dream Pie.

Turkey leftovers are history!!!

Fried flounder and roasted asparagus was a most satisfying dinner last night!

The weather has turned cold and I have a hanker'n for some "old fashioned" comfort food, l/c style. I have decided to make a 9x13 pan of Pastichio Italiano so I will have a piece for dinner tonight, along with a lettuce salad. I will then have it for my lunches next week, and since I have found that it freezes nicely, I will freeze the leftovers for another week's lunches later.

last night i made chicken parmesan with an equal mix of parmesan and almond meal. About half the coating ended up stuck to the pan But it was still good. made a side dish of pasta puttanesca with dreamfields pasta.

Last night I had roast pork w/cranberry port gravy, a few stewed cranberries and pearl onions, hash browned Delicata squash, and green beans w/onion and bacon. Dinner tonight will be an oven fried chicken breast, twice baked fauxtatoes, and green beans w/onion and bacon.

"Breaded'" fish.

My breading:
1 cup parmesan cheese
2 tsp oregano
1 tsp pepper
1tsp paprika

Scramble an egg and dip fish in the egg and then in the dry mixture. Cook in pain on stove top until done. Carbs are nearly negligible. This also works great with chicken!!

Have salad, broccoli or any other LC veggie to go with it.

Everyone loves it (even the kids) and it feels like a "cheat" meal.
