Tonight was simple. A hunk of danish blue on a rye krisp with a glass of white wine, while stuff was cooking. Then some cajun shrimp with a big tossed salad. ... and a bit more wine.

My dinner last night was delish!

Homemade Ranch Dressing
Grilled Free Range Chicken Breast
Salad w/ all the fixins

Tonight... I have school so will get a McDonalds lettuce wrapped chicken club sandwich (10 carbs)

Condo board meeting tonight at Billy Bob's Diner so will have to avoid the carb mines. I'm thinking a chop steak with grilled onions and cheese and a low carb side vegetable.

Last night was the Zuchinna Quiche recipe that's currently on the home page. Tonight, I'm thinking a carbquick pizza. (I try not to overdo the Carbquick because i don't fully trust anything I don't understand the carb counts on, but I like it and it doesn't bloat me...)

Dinner tonight will be roast pork loin w/ l/c cranberry relish, Dijonaise & cheddar crusted baked cauliflower, and asparagus.

Tonight I'm having grilled salmon loin on a bed of spinach with sliced cucumber and lemon dill mayonaise. I may even have a piece of low carb cheesecake for dessert with my coffee.

Tonight we are having a stir fry mixture of Diced chicken breast, shrimp, green pepper, cabbage, celery, small amt of onion, mushrooms, seasoned with chinese five spice, ginger and soy sauce

The chef is taking the night off tonight as I am taking DW out for dinner to celebrate our 41st anniversary. We will go to our favorite Italian restaurant where I will have the house salad and their Atkins Special, char-grilled chunks of chicken breast covered in Alfredo sauce w/artichoke hearts, spinach, and proscuitto. We will return home where I will serve champagne accompanied by a few macadamia nuts and some cocoa dusted almonds.
