Last night's dinner was a T-bone steak with oven carmelized onions and grape tomatoes and parmeggiano reggiano sprinkled for the last 5 minutes. Really good considering I was trying to get rid of wrinkly grape tomatoes.

Tonight's dinner will be roast pork, Rotel "Rice" Csasserole (cauli-rice in a Rotel cheese sauce), and asparagus.

I had some tenderized round steaks, kind of small, laid them out on the cutting board, added several frozen asparagus spears, broken in half, on each end, sprinkled with Italian cheeses, a bit of Italian seasoning and a few sprinkles of red pepper flakes, rolled them up, put them in a pan and covered them with 1/2 cup tomato sauce with more Italian seasonings and red pepper flakes, then sprinkled on more cheese. Baked until done. Tasty and very pretty when they were sliced. I guess I should call them Italian asparagus rollups. Should have taken a picture, they were so pretty.

We are hosting our book club tonight so I will just nosh on assorted l/c appetizers (assorted veggie crudite w/garlic ranch dip, deviled eggs, shrimp w/California style Chipolte cocktail sauce, meatballs in sour cream & sherry mushroom cream gravy, and 2 types of stuffed mushrooms) and a piece of Linda Sue's Chocolate Truffle Torte for dessert.

I'm going to get dh to grill some steaks, and I'll put some bell peppers and asparagus in foil to put on the grill, maybe a little onion, too. No dessert, I'm foregoing sweets for the month.

I'll be having roasted free range chicken and roasted baby bok choy. I may also eat the chunk of onion i put inside the chicken. A glass of white wine with it will definitely suit me tonight.

We are entertaining a friend and his new lady tonight. After inquiring about dietary restrictions I have finally decided on the following menu: We will start with a shrimp and sliced avacado cocktail with my California Style Chipolte Cocktail Sauce and then have sliced ribeye roast, mushrooms sauteed in butter and sherry, I will serve everyone else a baked potato while I have some "Rotel Rice Casserole", and asparagus. My friend has given up "sweets" for Lent, so I will offer him a "digestive" of a cheese plate w/or w/o fresh fruit. I will offer everyone else a piece of Chocolate Truffle Tort w/whipped cream. I expect that we will also have a glass or 2 of wine during dinner.

Supper tonight was a 2 inch thick pork chop, bacon wrapped asparagas and squash all cooked on the grill. I love with weather gets better and we can cook outside, we do almost every night till it gets cold again lol.

Tonights dinner is one of my favorite induction receipes that continues to appear in my menu planning, Deep Dish Pizza Supreme. I pile on the l/c toppings (sausage, ground beef, pepperoni, onion, green pepper, mushrooms, roasted red pepper, ripe olives and cheese) on the egg & cheese crust. I will accompany it with a nice lettuce salad.
