| 1 avocado diced 6 small tomatoes (cherry, grape etc.) cut in half feta cheese to taste 1slice red onion, chopped sliced black olives black pepper, olive oil and balsamic vinegar to taste Combine first 5 ingredients and dress with the last 3. Serve on a bed of spinach, lettuce or whatever greens you prefer. |

| I like to slice them and intersperse them with shrimp in a shrimp cocktail and then dip them in what I call my California Style Chipolte Cocktail Sauce to eat.

| One of my favorite ways to eat avocados is to take a half, sprinkle with salt & pepper and drip some fresh lemon or lime juice over it. ... or put some salsa in the crater left from the pit. Then just eat it out of the skin with a spoon. Also, I love to add chunks or slices (depending on the mode I'm in) to a salad.

| Yumm! I like them in salads too. Lettuce, tomato, diced avacado and stir fried chicken breasts and Marie's bleu cheese dressing! Wow awesome!

| I love them in salads, too, or just sliced up and put a little salt on them. I've also cut them into little cubes and fork it up with whatever I'm eating - roasted vegetables, chicken, etc. The creaminess of the avocado mixed with whatever else is really good. Did that make sense?

| While we're on the subject of avacados, I've noticed that quite often when I cut one open, there is a bruising type discoloration. Sometimes it's around the pit, or more often around the parimeter. I'm assuming this just a natural thing. I try to scrape off most of it, but I assume there isn't anything unhealthy with eating this. Am I right? Do you notice this too? What do you do?

| I've noticed that too Gregg. I always just cut out the dark spots and eat the rest also. I think the dark spots are due to bruising but I don't know for sure. All I know for sure is I'm wanting to buy some avocados today!

| Yeah, the dark spots are oxidation from bruising. There's some general information here. My own experience is that when I get a hard avocado with no visible dents on it, and ripen it at home (I just leave it on the counter and check very gently each day) I'm likely to have less bruising once it comes to ripe. If I do have one with dark spots, I just cut them out or eat around them.

| I make a spicy chicken soup with sliced leftover grilled chicken, chicken broth, chopped veggies, some canned diced tomatoes, jalapeno, garlic & cilantro (sort of a chicken tortilla soup without the tortilla). Chunks of fresh avocado are fantastic in this - cool and creamy relief to the hot & spicy soup. Alternatively, sliced and served inside homemade fajitas (iceberg lettuce leaves instead of tortillas)...in salads....etc. :-) |

| I like mine any way, shape or form.........except with cilantro! I HATE cilantro. So I usually end up making my own guacamole. But since Snyder's Soy Crisps have disappeared from my grocery shelves, I don't make it much anymore........not chips to eat it with. But I like them with anything. I like them like Maggie, with a sprinkle of salt and lime juice and eaten right out of the shell. I slice 'em and put 'em on salads. I slice 'em and put 'em on BLT's with LC bread. I could eat them every day of the week. And DH doesn't like them, so MORE for ME! HA!
