Question Low Carb Homemade Bake Mix?

Howdy folks. I got asked about making your own LC bake mix. I don't do this but thought I'd toss the question out to see if anyone here does (and what you use) to see if you could help

This is the one I use:

Faux Atkins Bake Mix


1 cup soy flour

2 cups soy protein isolate

2 tablespoon baking soda

1 teaspoon salt

2 tablespoons Splenda

Sift together then store and use as you would Dr. A's. It's much cheaper
and things come out about the same.

Almond Flour Mix


1 cup almond flour
1 cup vital wheat gluten
1 cup unflavoured whey protein powder
4 packets Splenda
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Mix all together and store in a zip lock bag in the fridge. When a recipe calls for bake mix, just measure according to the recipe.

Yield: 3 cups

I also use Vital Wheat Gluten (Bob's Red Mill). I'm not gluten sensitive so it works fine for me.

I use as a base:
1/4 cup soy flour
1/2 cup VWG
1/4 cup E.A.S. vanilla Whey Protein Powder
1/4 cup Old Fashioned Oats, whizzed in my bullet to make flour
2 tsp. Baking Powder (non-aluminized - Argo, sodium bicarbinate)

I mix it all together as a base for quick muffins, pancakes, etc.

I've also used this mixture for making a pan cookie with dark chocolate bits, nuts and a few raisins. I usually double the "flour" recipe to make a 9X13 pan cookie. I just measure out enough of the flour to follow the Tollhouse cookie recipe on their package. I don't do this very often.........it's dangerous with portion control!

It makes GREAT pancakes!

Anyone with gluten problems should avoid this recipe.
