Chili! Shrimp avocado cocktail! Rib roast! my mouth waters!

made lazy man's chicken parmesan last night. no breading. just pounded the chicken added 2 tbs of pizza sauce and topped with shredded 6 cheese italian blend. served with dreamfields spaghetti with garlic and olive oil and real parmeggiano reggiano.

Rob, my son is visiting with his family, so we are having "guest dinners". Last night it was baked ham w/cranberry relish, twice baked fauxtatoes for me, (potatoes au gratin for the others), and buttered sugar snap peas.

As it's Good Friday and I'm cooking for my parents , they are sticklers for tradition, I'm having salt cod and mashed turnip (they will have potato) drizzled with hot rendered salt pork and scrunhions (kind of like those pork snacks I can't remember the name of). Lots of coarsely ground pepper and hot mustard on the side. YUM!

I just put a pork roast in the oven for dinner tonight. When it comes out, I will put a shortcake in. Dinner will be roast pork, twice baked fauxtatoes, green beans w/onion and bacon, and warm strawberry shortcake w/whipped cream for dessert.
