| 1. If it's really good, and I get carried away, then the *damage* isn't as horrific as scarfing, say,6 servings of cake, muffins or whatever. 2. If it's really bad, and I end up tossing it in the trash, then the loss of my LC ingredients isn't quite as costly. Anyway, I digress... Several weeks ago, DH asked if I would bake him a chocolate cake. Since I don't buy, use, or keep the standard boxed cake mixes in the house anymore, I decided to try and make a LC (2 servings) chocolate cake that would lure my DH over to the *dark side* of LC!! ![]() So, after a few tweeks, I came up with 2 different cakes from essentially the same basic batter. LC Cream cheese Cake By Shelleyg Chocolate version Lemon version Copyright 2009 Mix and sift dry ingredients together and set aside: ½ Cup Coconut flour ¼ Cup Erythitol 1 Tbsp. SteviaPlus 2 tsp. baking powder If you want to make the chocolate version, add: ¼ Cup dry good cocoa powder Mix wet ingredients together in a 2 C measuring cup: ¾ Cup Egg beaters (you need this for the liquid property) 1 whole egg, beaten 15 drops liquid splenda(like Sweetzfree) If making the chocolate version, add: 4 Tbsp. strongly brewed coffee, cooled 2 Tbsp SFDV vanilla syrup + 2 tsp good vanilla If making the Lemon version, add: fresh squeezed juice of 2 lemons, and the zest of 2 lemons.(zest first, then squeeze the juice) In medium size mixing bowl, place: 1 (one) 8oz package cream cheese, at room temperature (important for cream cheese to be very soft) Whisk wet ingredients into cream cheese until well blended and mixture is smooth. Slowly stir in dry ingredients, a third at a time, stirring well between each addition, until all the dry ingredients are mixed in. Spray 4 ramekins with butter flavored cooking spray and divide batter evenly. Microwave one at a time for 2 min 30 seconds to 2 min 45 seconds depending on your microwave. Let cool 5 minutes, then turn out on wire rack upside down to cool. Option 2: Put batter in sprayed 9 inch round glass pie pan. Microwave on high for: 3 min; rotate ¼ turn, mw 3 min; rotate pan to L side of mw and cook 3 min; rotate pan to R side of mw and cook 3 min; finally, place pan to center of mw and cook an additional 3 min, or until cake springs back when lightly touched. Cool in pie pan for 20-30 minutes, then invert on wire rack to finish cooling. Before serving, squeeze juice of 1 lemon, and add dash of steviaPlus and 4 drops liquid splenda. Heat on high for 20 seconds in mw. Pour hot *syrup* over cake and serve. Chocolate Ganache Topping for Chocolate version This makes 1 serving of ganache In top of double boiler, place:(*) 1 ½ Tbsp half and half cream or heavy cream Dash of SteviaPlus 4 drops liquid splenda(like Sweetzfree) When cream is warm, add: 1 ½ squares of Ghirardelli 72% Twilight chocolate, chopped. Whisk continually until chocolate melts and comes together.(takes about60-90 seconds). Remove from heat and stir in a dash of good vanilla. Top a warm individual chocolate cake with ganache. Garnish with 3 chopped pecan halves, if desired. Add carbs accordingly. (*) I use a small glass mixing bowl for the top part, and place it over a small sauce pan with water that does NOT touch the bowl; do not allow water to boil, only simmer. Nutritionals: Ganache: 120 calories; 10g fat; 1g pro; 9g carb; 2g fiber 7g net carb Chocolate cake version: 1 individual cake: 322 calories; 24g fat; 15g pro; 16g carb; 8g fiber; 8g net carb (hubby & I share, so 4 net carbs) Lemon cake version: 1/6 of round cake: 215 calories; 16g fat; 9g pro; 10.3g carb; 4.2g fiber; 6.1g net carb. I have also made this with only vanilla extract and a capful of almond extract, and it’s a very tasty shortcake for strawberries. ![]()

| Those pics are enough to make my mouth water. Too bad I'm too lazy to go buy the ingredients and to make them for myself. I think I'll just come to your house next time you make some. |

| And...................when are you serving??? I have two pieces of the REAL stuff in my frig. and I'm trying to stay out of it. Dh is gone all day.............Yikes!
