Thumbs up Key Lime Pie Filling

I made this last night and it's oh, so, yummy. I had to share!
I figured out there's about 4.3 carbs per serving if you get 8 servings from a recipe.

SF Key Lime Pie Filling

Ingredients:
1 small pkg. SF Lime Jello
1 cup boiled water
2 - 8 oz.pkgs. Cream cheese
1 cup heavy cream
¾ cup Splenda +
1 TBS Splenda; 1 TBS Sweet ‘N’ Low; 1 tsp. Stevia
Juice of 2 limes

Dissolve Jello in boiled water thoroughly. Add cream cheese in small bits and whisk until smooth. Add sweeteners and lime juice. Whisk in. Add cream and whisk in. Refrigerate until set or pour into your favorite cooled nut crust and refrigerate until set. If you use a nut crust, the carb count will be higher.

I just used a whisk to blend all the ingredients together 'cuz I didn't feel like dragging out my stick blender or mixer, but you can certainly use those tools if you have them. Also, if you don't have any Stevia or Sweet 'N' Low, feel free to experiment with adding a touch more of your favorite sweetener. Taste it and see if it's sweet enough for you, if not, add a teeny bit more. Liquid sweeteners shouldn't impact the over all carb count, but if you add more Splenda powder, don't forget to add on the extra carbs.

BTW, I was going to make LC Tiramisu for my DGD and DGSs' b-day party next weekend, but I've decided to make this instead. It's WAY easier and just as scrumptious. I will make that one with a nut crust for sure. (Actually I'll have to make at least two.)

What size on the sf lime jello?...large box, or small box?
What size on the pkgs of cream cheese?...3 oz or 8oz size?

While I was making another batch to take to my SIL's tonight for dinner, I was thinking, "You could make a lemon chiffon version of this just by subbing the jello with lemon jello and the juice with lemons. YUM!"

I'm making a crusted one to take to my SIL's tonight. They invited us for dinner and I wanted to bring a dessert I could eat. I'll snap a pic after it's all assembled. Although, I don't know how easy it will be for me to get it onto my puter. This dang thing doesn't have a USB port. I will put pics on a disc at Walgreens and then maybe I can load it onto my machine. We'll see........

Sorry Shelley, I should have specified that shouldn't I have? Duh! It's a small box of the jello and the 8 oz. cream cheeses. I'll go in and add that info. Thanks for reminding me to do that!

It's so yummy, all I've been doing all day is scooping a spoonful here and a spoonful there. I better go eat some REAL food, HAR!
