Mission Tortilla Lasagna

Default Mission Tortilla Lasagna

I've been rolling this idea around in my head for awhile and finally tried it. It was GOOD!!!!!

I simply lined the bottom of a cooking-sprayed casserole dish (a deep 8X8 or so Pyrex baking dish) with 2 LC Mission Tortillas. Then I threw in a layer of cheeses (Parmesan, Mozzarella and Provolone), then on top of that a layer of my favorite, homemade spaghetti sauce with browned mild Italian sausage mixed in. I repeated the layers in that manner until the dish was almost full. I baked it until the cheeses on top were beginning to turn golden brown. YUM!

I haven't figured out the carbs yet. When I do, I'll post that.

This probably isn't Induction friendly, but it's definitely LC friendly!

No problemo! Let me know what you think of it if you make it. I actually cooked mine in the microwave first and finished it off in the oven. It's pretty microwave friendly if you don't want to heat up your kitchen. I'm toying with the idea of adding garden grown eggplant to the next version. IT has endless possibilities for adding more veggies. I also added diced garden grown zucchini to the sauce. Couldn't even taste it!

I was actually thinking of making it more like traditional lasagna and doing the cheese layer with ricotta, parm, egg, and Italian herbs, then doing a mozzarella layer as well.
Your right...lots of possibilites!
As fast as some of the LC products are disappearing, I'm just praying the LC tortillas NEVER go away!! That's a scarey thought!

I know, right!? Perish the thought! So far, ALL of the stores I visit carry the Mission Tortillas. EVERY time I go shopping I pick up a pkg. I freeze them, so I have plenty on hand at all times.

I actually saw an episode of Good Eats I think that is the name of it. With Alton Brown and he was making lasagna with tortillas too! I saved the episode to try them but I hadn't yet. I wonder if it would be good with Joseph's lavish flax bread? One long sheet would be a good layer or cut in 1/2 and make a smaller lasagna and have 2 layers or even do it in strips like lasagna noodles. hmm. I use it for everything else so I'll have to try.

I've done dreamfields but I consider it a spurge.

I've done the deli turkey lasagna it was really good too.

and eggplant lasagna. I loved it but the family not as much.

I LOVE Alton Brown! He's so funny and informative!

I've never heard of that Joseph's Lavish Flax Bread. Is it tortilla-like? If you think it would work, go for it!

I have some eggplants from my garden, but I want to make eggplant parm with them.

Dreamfield's gives me intestinal distress, so I had to lay off. Makes me kinda sad, 'cuz I LOVE Dreamfield's. That's what prompted me to try the tortilla lasagna.
