Default Easy Chocolate Bark

I checked the Chocolate section of the Recipes, and didn't see this easy favorite of mine. So here it is. I don't remember where I got the recipe, but it doesn't seem like something that would be "chef protected."

Easy Chocolate Bark

1/4 c. coconut oil--melted
2 TBS. (more or less) unsweetened cocoa
2-3 packets Splenda (or sweetener of your choice to taste)

Ways to make your snacks:
--Thoroughly chill a metal pan (with wax paper) in the freezer. After mixing up the ingredients, pour it out in a thin sheet and refreeze or refrigerate until hardened. Break the bark in pieces, store in fridge.
--Use a muffin tin. Pour out four equal portions--one TBS each. Freeze or refrigerate.

These must be kept refrigerated. Coconut oil is liquid at room temperature.
You can add chopped nuts, coconut, or whatever is in your plan.
Basic recipe is approx. 2 carbs per serving (figuring four servings per recipe)

When I make this I put chopped pecans in it and pour a tablespoon or so into the bottom of a muffin cup. You can probably use the paper cups but I have the silicone ones. After it gets hard in the fridge, I stack the cups and store them in a bag in the freezer. That way I get even portions and am sure that I am getting the amount of coconut oil in my diet that I want. Great recipe though!

Why am I not surprised that this was your first thought, Rob?

The mushrooms are LC easy, too. Meringue is totally friendly, and I often have a stock of egg whites frozen this time of year after the summer (French vanilla) ice cream season. I'm sure that season is over for me. I've already put away the ice cream maker and replaced it with the slow cooker.

... and I know I have a recipe for a chocolate roll that I liked. Hopefully not one that got lost during computer changes. LOL!

Please what is coconut oil?
We have coconut milk and coconut cream but I cannot ever remember seeing coconut oil. Just had thought do you mean copha? It is a hard white block that you melt with chocolate to make chocolate crackles for the children?
gather I am on a US site I live in Australia but looking for help and food ideas

Ali. I think Copha is a form of hydrogenated coconut oil. Copha is apparently only sold in Austrailia. I looked on the Peerless website but they do not list the ingredients in Copha. I do note that they apparently have another product Kremelta which is coconut oil hardened with soy lecithin. I believe Kremelta is the same as Copha, only sold in New Zealand. Coconut oil sold here in not hydrogenated and does not usually have an emulsifier, like lecithin added. It is a soft/solid at room temperature, but has a low melting point. If Copha is the same as Kremelta, it should work fine in the chocolate bark recipe.
