I made these over the weekend and they were fantastic.

2 cups of pecans
2 egg whites
1/3 - 1/2 cup splenda
2 tsp. cinnamon

Preheat oven at 300*. Toss the nuts in the egg whites until well coated. Add splenda and cinnamon. Spread nuts in a single layer on a greased cookie sheet. Bake for 30 minutes.

The house smelled heavenly. I was thinking that you could tweak this for any flavor you would like. I might try using garlic powder and italian spices instead of splenda/cinnamon for a salty snack.

Yep, these are really good. I make them with almonds, too, and do a spicy version with cajun seasoning.

Egg whites? That's interesting. I've never done that. I use butter, splenda, salt, pecans.

I call mine Crystalized Pecans because they get a "crystal-like" coating from the butter and splenda and hey, I LOVE crystal! lol
