Here is a recipe for a fantastic meatloaf. Ingredients are a bit unconventional for meatloaf, but it is a family favorite in my household. Best part...it's not dry!

1-1/2 pounds ground beef
1 small can mushrooms -- chopped
1/4 cup onion -- minced
1/4 cup bell pepper -- chopped (I usually omit these)
1 cup grated cheddar cheese
1/2 cup cream
1 large egg -- beaten
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoons mustard
1 cup pork skins -- crushed

Mix all ingredients together, form loaf and place in loaf pan. Bake at 350 for 1 hr 15 minutes. (Or until done).

15 grams of carb for the entire meat loaf (including peppers).

This recipe doubles nicely and is great as leftovers.

Kelly, that's nearly the same as my recipe, except I also add a pound of ground lean pork or pork sausage.

Mmmmm, I think it's getting to be meatloaf time again!

Thank you so much for posting this! I have been scratching my head trying to figure out how I was going to make meatloaf. (The idea popped into my head and I couldn't let it go...) I have been writing down ingredients and tweaking them here and there and I just couldn't get it right! So, I'm going to CHEAT! HA! Legally! Thanks again!

Mmmm...adding sausage sounds really good. I like using recipes as the foundation and change them to our tastes! But this one is a keeper. Even when we have been off of Atkins this is the recipe my family requests. I agree...it's meatloaf time.

And there's no cheating on this one. It's 100% legal...even in induction.

Kind of similar to mine but I use a small roll of Jimmy Deans sausage & I use the barbequed pork rinds. Why did I never think of adding cheese & cream? Thanks for sharing.

I plan on making meatloaf tonight, so I'm going to adopt some of your ingredients.

That sounds great! I've been trying to get ideas for dinner that everyone will love, that isn't just grilled meat and veggies.

And BeeJay, we're practically neighbors.

Sounds great!

I made meatloaf on Sunday. Normal recipe for the family. I took some of the meat for my own loaf and starting creating. I used an egg, ground up pork rinds, grated cheese, shredded cheddar, granulated garlic. Mixed it all together and popped it in the oven. My husband tasted it and said to make that version from now on LOL.
