How bad is this??????

Well, I'm sure this is unforgivable to the max, but......I made "Fau-tatoe" salad tonight to go with the hot wings. I mixed the cooked cauliflower, diced boiled eggs, mustard and mayo and spices, and...here's the bad part...1 small sweet pickle, diced well. I rinsed and dried the pickle before dicing it up...like that did any good...LOL The good news is, it was still a low carb dish, IMO...1/2 Cup for 2.5 carbs.
For a person who previously would not touch cauliflower with a 10 foot pole, I ate it and really liked it

Sooooooo....how bad is this???????

It's probably NOT all that bad - although I try REALLY hard to avoid sugar in anything, so I've switched to dill pickle relish in my cauliflower salad and just add 1 pkt. Splenda to the dressing mix. Works well for me, we love that stuff!

I know, I know, I know....LOL...I haven't even LOOKED at a sweet pickle all year, but I figured if I had a snowball's chance in hot weather of getting my DH to try this dish, it HAD to have a wee bit of sweet pickle...hehe
I did use some vinegar and splenda in the mustard and mayo dressing though.
Next time, I will do something else...don't know what at the moment, but something LOL

Shelley, LOL! Sometimes what we gotta do to get the ol' DH to try something....

I love fauxtato salad. Can you find mount olive brand sweet pickles, they are sweetened with splenda? Walmart carries them here.

LOL ROB!!!!

I am going to try tweaking an old recipe for sweet pickles my mom makes. She takes a big jar of dill pickles, drains the juice. Fill the jar with water and apple cidar vinegar to within 2" or so of the top. Add (gasp, sugar-'bout a cup) and throw in a bouquet garni (or coffee filter filled and tightly closed with a rubberband) with pickling spices. Cover the jar with cellophane and screw the lid on tight!!!! Let is sit in the fridge for 4 days, rotating the jar upside down and rightside up each day. Make sure you put it in a bowl if it leaks while upside down. OOOOOOOOOoh I gotta try this with splenda. Think I'll go do this right now.

And yeah, when are we not gonna be "newbies" anymore, hurumph........

And Barb, my mom made those conversion dills to sweets also...she did it to be "thrifty" though...hehe. I don't think sugar cost as much back then...LOL
