Recipe for LCPorkChops?

Hmmm..my roommates are in class and at work..so it's my job to cook dinner tonight. Joy joy.

Anyone have a good idea for a LC recipe with pork chops? Gonna fix them broccali, rice and cheese stuff...probably have some broc and cheese...and salads...but I'm trying to figure out something to do with the chops beyond sticking them on a cookie sheet in the oven.

Any suggestions??

Crystal,

A couple of recipes come to mind, but you may not have time to do this one: marinate the pork chops in some bottled Italian salad dressing(make sure the carb count is low) for a couple of hours then spice them up with some garlic pepper and then cook them out on the grill.

The other way we like pork chops, is "oven fried"...crush up pork rinds, add spices like garlic pepper or season salt(lightly), dredge the meat in an egg/cream wash, then in the pork rind "breading" and line a cookie sheet with foil, spray with pam, and bake them at about 375-400 until done, usually about 45 min to 1 hr, depending on how thick they are.
They come out soooooo tender and juicy
