Veggie Slaw
(modified from version found on Atkins website)

1-1/2 cup of chopped broccoli (pea size) (5.1 carbs)
1/2 head cauliflower, chopped (pea size) (11.75 carbs)
1/2 pound no-sugar-added bacon, cooked crisp and crumbled (1 carb)
4 oz. shredded cheddar cheese (1.5 carbs)
½ cup of skinless peanuts (7.2 carbs)

1 cup mayonnaise (4.8 carbs)
1 tablespoon Splenda (1.5 carbs)
2 tablespoons cider vinegar (1.8 carbs)
1/2 teaspoon salt
1/4 teaspoon freshly-ground pepper

Place the first five ingredients in large bowl and toss to mix.

In a small bowl whisk mayonnaise, Splenda, vinegar, salt, and pepper to combine. Pour dressing over vegetable mixture and stir until ingredients are thoroughly combined.

34.5 grams of net carbs
8 servings for 4.5 grams of net carbs each

Yuppers, Sharron. I was one of those types who always ate last night's leftovers for breakfast, and pizza was always a treat. "If it sounds good, eat it!"

Better to be considered "weird" and losing weight than eating a typical breakfast and gaining!!! Sounds like a fast breakfast too. Just what we need here.

Although I'm going to sub sunflower seeds for the peanuts since I'm not a big peanut fan. I bet almonds would work there too.

I'll bet the sunflowers would be good. I love peanuts...even though they aren't the best for you. I agree, I think next time I will try almonds. It's good stuff.
