| I've tried several times to make a LC cake and it was a mess. I'm mot so much wanting the thing for myself, but for my family (kids) who are doing a moderately LC diet along with my DH and I on our Atkins. What I tried was the Atkins bake mix and their substitution conversions, and subbing splenda, with a regular recipe. Susan LC and feeling better every day! Atkins since 7/18/03 210/190/140 |

| Susan, There ia a very good basic almond flour pound cake recipe on www.lowcarbluxury.com in the recipe section. I've found that spice cakes, and pound cakes and carrot cakes, zuchinni type cakes are the best to make...they are a very dense body cake and people expect them to be a single layer for the most part. Also, I've found that if you use a recipe with no SOY FLOUR they taste much better. The pound cake is very good, and you can top it with some fresh berries, or make some chocolate cream cheese frosting or whatever you are in the mood for...or whatever the kids are in the mood for Also, if you have Sharron's cookbook, she has some excellent recipes for cakes and desserts. | Hey Susan! I can tell you that almond cake is a huge hit with us. I made it in muffin tins this week and served it to friends who aren't lowcarbing - they all wanted the recipe. I have experimented with using 8 oz of cream cheese and an extra egg and that works nicely - more cakey to me. And you can make a spice cake by adding cinnamon, nutmeg or whatever you prefer.
