I just finished making a huge (25 pints) batch od salsa. It makes bithcin' scrambled eggs and I love it on everything , I'm not sure on the carb count but this is whats in itfor a small batch:
4 cups chopped tomatoes
2 cups chopped green peppers
1 cup chopped hot peppers
1 cup onions
alot of chopped garlic I never measure
1 cup cider vinigar
salt to taste
bring to a boil cook for 20 min process in pints 15 min @15lbs pressure, or eat raw.
I put some mushrooms and raw salsa in a pan and cooked it for a while then mixed in some eggs put cheese on top and it was spicey yummy
